It's an East African spice blend called Royco. This chicken recipe is actually called" Ugandan TV chicken". Their ancestors were mesmerized by rotisserie chicken " somersaulting" in big display rotisserie ovens in the shop windows in the British parts of town. They thought the chickens were being cooked in a Television. When they tasted it , they found it dry, bland and spiceless so they spiced it up by adding spices and vegetables and gravy, the recipe of " Ugandan TV chicken "was born. Now they apply the same treatment to even deep fried chicken . They just can't stand anything without spices and they abhor foods without gravy.
My first city outside Kenya was Kampala.The first night I landed there from Nairobi that famous Uganda chiken was the first thing i went for lol then drowned it wil bell beer..then went to Club Capital..the rest of the weekend felt like I was in a dream.love from Nairobi 🇰🇪.

I understand where you are coming from. However, this is really common with street food in Uganda and other African countries honestly, that is its authenticity, that is what makes it street food. The time to wash, change ladles oil, the cost of that too, etc 🙂We barely think of allergies. It is like a golden rule, if you are eating from the street, you cannot complain, usually no rules or proper hygiene, you know what you are signing up for. In fact, we used to joke about the dust being an extra ingredient while growing up😅
My advise is that you let the people speak a language they are comfortable with and employ subtitles. I think it will be much better. Otherwise content with food always has me hooked. Keep doing your thing brother.
