I enjoy the small kitchen Sous' day but I am a Sous of a high volume restaurant, we really depend on our line cooks and the talent they can bring to the line.
Wow that’s amazing. This kitchen is small with 2 to 3 chefs working. Sous is really just a position name. The work is the same, just more responsibilities.
I started cooking seven years ago for real, and I started with pasta, and lasagna and roast chicken. Very normal American dishes. When I turned on Food Network, or any sort of cooking channel, that's what people were making. So that's where your education comes from. *_--_*

best and most effective for me is through recommendation. Make connections, join social media groups, international student orgs, communities, etc. Ask around and you'll never know. I got most of my jobs through community connection on Facebook. Also, check out my HOW TO playlist. Got a video about applying a kitchen job there. 😊

Opo. Ang certificate 4 is more of advancing your culinary skills and knowledge. A higher level of practical culinary skill and the understanding of the business side of the industry too.

Many chefs don't wear gloves. I know that because I worked in kitchens many times.
As a head chef , I never were gloves unless serving cooked food.
Wearing gloves is time consuming and slows you down
