Most of these bosses have unique finisher moves as well I think, so it’s always worth making sure to land the last couple of blows with your sabre, rather than with a throw/blaster shot
The Warrior perk in NG+ is super weird, because some fauna, only on Koboh, are upgraded to their boss form… but for some reason won’t be once the actual Legendary Boss has been defeated. All Bilemaws (orange) are upgraded to Vile Bilemaws (green), all normal Mogus (brown) are upgraded to the grey ones from the Mire Terror boss (grey ones aren’t upgraded to Mire Terrors for some reason), and all Garoccos are upgraded to Garacco Matriarchs. However, probably the weirdest thing I found was with the Spawn of Oggdo. I was going by the trap and accidentally opened it, but didn’t fall in. I didn’t want to fight Oggdo just yet so I didn’t go spend an hour trying to kill him. But then, when I was just running around Koboh, instead of there being the normal Bedlam or Imperial patrol, I encountered a Spawn of Oggdo just walking around. I thought this was a bug, but it happened 3 more times. When I went back and defeated the demon frog, this stopped happening. So basically, the game forces you to kill Oggdo when you first encounter it, and won’t let you walk away if you just want to come back to it later. That is evil.
You really lucked out not having to do the Mire Terror IMO. It's actually two Mogu (although one is normal with a normal health bar) and this one absolutely fucked me up on both playthroughs. Also annoying that when you die, you spawn back in across the pillars, so you have to do all three pillars and jump across all over again, but you also aren't at a meditation point to change your stances or anything.
Confuse ability maxed with the Perplexity perk makes this fight probably the easiest Legendary Boss in the game. I had the normal Mogu beat the crap out of the Mire Terror, and once the boss killed the normal Mogu I was able to kill it in a couple hits.
Beetu Deetu does spawn in earlier in the game. I'm playing through two saves right now and know I've been back there at two different points - pretty sure it was there both times I went through. Should be available after you visit the swamp as part of the main quest.

I’ve seen people do NPC AI battle videos or where they fight NPC’s wherever they want, do you have any idea what mod people are using? Cause it’s not on Nexus mods

That sounds like a pretty fun challenge, triggering spawn of ogdo and then playing the game as normal with warrior to have some extra challenge

Same happened to me with the mire terror boss. It's a common bug but at least it doesn't block trophy progress.

If you use the cross vent on fist of Ravvis you can break his poise and stun him and throw him off the edge he’s pretty easy
