Paper Wrapped Sponge Cake

- Makes 10-12 sponge cakes with regular muffin pan.
Ingredients
4 egg yolks
2 tablespoons sugar
3 1/2 tablespoons oil
2 1/2 tablespoons milk
1/2 cup cake flour
4 egg whites
2 1/2 tablespoons sugar
Bake @ 350°F for 20-25 minutes or until golden brown
No cake flour, no problem. Easy substitute- put 1/2 cup of all purpose flour in a container, remove 1 tablespoon of AP flour from it, and put in 1 tablespoon of cornstarch, mix it well. That's it, you made cake flour.
This is my wife’s go to recipe, tastes better than the ones from
NYC I grew up eating.

Of substituting 1 Tbsp of corn starch to 1 Tbsp APF to make cake flour!

Simply add in 3-5 tsp of cocoa powder, depends on how intense cocoa flavor you want. Also might want to add about 1 tablespoon of sugar😊 happy baking!
can i use all purpose flour instead???
Yes you can. But the textures might not be as moist. You can use all purpose flour and cornstarch to substitute for cake flour.
