Deer don’t actually have a gallbladder. It’s one of the only species, if not the only, that doesn’t have it. They don’t really have a need for it. That’s probably why you can see seeds in their pellets.
The two deer that I got so far in north Carolina this year both had liver flukes.

Thanks for the video! I love liver, I just hadn't had any in years until after surgery, when I was told to eat it. Storebought liver varies so much. Crazy part is, the most expensive, "veal liver," is disgusting. All fatty and mushy-pasty, I nearly upchucked on my first bite. I was stuck home in a 3 day blizzard & cut off a bit from the other end, trying to tell myself I just got a bad bite.
Never do that.

Why might one liver make you gag while butchering it into cooking portions, and another liver smells good. Both were young bucks. The nasty one was small enough to get a doe tag. Did the blood sit too long? Or did the gall bladder get punctured? Should I just throw that liver away?
Did you eat it? Curious since it was a year ago - hope everybody lived, stayed heathy
Can we use these same methods for beef?
Found a round worm in a deer today after accidentally puncturing the stomach gutting it. I might stop eating raw deer meat.
Wow that is pretty extreme Jarett. Those of us who have raised different ruminant animals can assure you that most animals butchered have a parasite load. Part of nature really. We may be able to manage some out but really we are just in the battle. We never really win the war. Just get over it. You probably have a few of your own.
Any liver cooking videos? I would love to see one from an expert.

STEVE COCHRAN it’s really really good. You might think it’s dark and tough with a strong iron flavour but it’s quite the opposite. Far better even than calves liver imo. I dusted thinnish slices with herby flour and fried in butter
@@badcliffe your right, it was delicious, never again will the foxes get my deer liver or heart, they are better than even the tenderloin.

Moose in Montana are thick with flukes quite frequently, I think that's what it is. Big circular defects all over liver like tumors whiteish colored, anyway that's what fish and game told me they were. Nasty!
