As requested, opening help: Use the explorer, for your level it's practically free, it basically shows you moves that grandmasters have made in the past and how it panned out for them. I'll also suggest looking into unusual openings, it basically makes you always know more about the opening than the other person.
When your opponent played bg4 pinning your knight your pawn on d4 was not just taking space in the center but was also attacking his dark square bishop, so you could have just taken his bishop for free and ignored the pin for the moment
Re: The opening question - You can't expect to be able to play d4 as well as e4 if Black's whole development is based on controlling that d4 square and yours isn't lol. You can't have everything.
1:16 you didn't need to address the pin, yo just needed to take the free bishop on c5. You ended up a piece up anyway because he initiated a series of disadvantageous trades, but you had an easier advantage earlier than you took it. As for the move itself, it only snowballed because your opponent was blind lol. It was still a solid move in the sense that you took the free pawn but all your opponent had to do to prevent it from instantly snowballing was move the king to h8 instead of taking the knight. The discovered check itself was a lot more clever for someone of your rating than the "just taking the pawn" move that the engine called brilliant.
A fun uncommon trick is just to take the e pawn with knight in basic opening like this. And then go e4 on next move to fork the two pieces allowing you to win it back.. usually ends up an even exchange but gives you more central control and is fun because it looks crazy like you’re sacrificing a knight. If you want to see some other fun stuff from similar basic opening like that look at Max Lange attack and Scotch Gambit there are fun sneaky things like crazy but I don’t remember them or get the position enough
2:04 instead of moving the king you could have saved your d5knight by moving it to e3 protecting the bishop and then just move up the c pawn to defend against the queen lining up with the bishop next move.
