This is how we traditionally make dosai with a prepared rice flour batter and with different stuffings in the South Indian cuisine. You can close the pancake with a lid for even cooking on the top.
We do the same battter but add samolina. Bigger amount than flour. Nope, does not turn out crispy. Quite similar to your pies which makes me wonder if semolina was necessary to be added. Very delicious pies. 🥰👌🏻 May I add a suggestion? If you’d like to make a meat version add a mixture of tahini, yogurt and chopped tomatoes, season lightly as desired with salt and white pepper to taste and bind it with meat adding a bit of cheese if desired along with a few fried pine nuts. Sounds a lot but it all gets ready in a few. 😉

yes i didn’t grease the pan because i used non stick pan, and i used Baking Soda, bit you can use baking powder instead of baking soda
