Pumpkin puree is a fantastic soup additive. It thickens with starch and carbs, makes the soup more filling and adds flavor. I like canning it and canning turkey stock made from the carcass after thanksgiving and then adding them together later for a soup base that can be made over and over into the late winter and early spring. It also goes VERY well with a red lentil stew for inexpensive delicious high protein meals.
Fascinating! I didn’t know this could be done with large pumpkins too. Imma do this with my big pumpkin on my front porch that I bought last week that has already begun to get slightly squishy on top. I was sad it started to go slightly bad but after seeing your vid, I’m excited! Thank you!
Tyfs! I've been wanting to can puree instead of the chunks. I didn't notice if you added any salt or citric acid? I am going to roast that dang pumpkin on my kitchen table & am sure to get at least 10 meals out of it!
I didn't know you could can pumpkin puree. I'm learning to can things from my Maw-maw. She just does the water bath method. And honestly I'm scared of the pressure cooking thing. It just seems like if you do it wrong it could blow up or something. I'm just now getting into cooking. And well nobody can cook like Maw-maw. Mother is not into that sort of thing. Not trying to sound mean, but it's just not her thing. I still love her so much. At our house daddy main the main cook. Well.....daddy the main everything really. And that's because mother works a lot. She's a judge in the city next to us. And that's a very important job. So she's up early and works late. And even when she's home, she's still at work. If you know what I mean. It's aways been like that. Daddy says she doesn't know how to turn it off. All I know is that it's hard to be close with someone like that. I think I'm more like daddy and that side of the family anyway. They are more country. We're from Texas BTW. And I totally want to be like Maw-maw. She never graduated or had a job for that matter. She was a stay at home mom. They had a big garden and some animals. Daddy and Aunt Jane are her only children. Even though she didn't graduate she still knows a lot. There's not a single cook book in her whole entire house. And no recipe cards either. It's all in her head. So I just think it's important for me to learn everything she knows. Cuz it seems like nobody else gives a crap. If I don't learn these things they'll be gone forever. And I don't want that. She's been cooking since she was little. You can't let that knowledge be lost. I like spending time with her. And I think she likes having me over also. It's just her and Ethel over there. Ethel is a retired milk goat. And she needs help with her garden also. Ever since I was a little girl I wanted to be like her. The only difference is that I want to have a bunch of babies. I just don't know know if it'll ever happen. That's because mother expects us to do what she does. When my oldest sister graduated she pretty much signed her up to the same college she went to. and for the same classes too. Well maybe Kirsten doesn't mind that. Her and mother are so much a like. But I'm not. And don't want to be like her either. I don't want to be in charge of deciding if someone goes to jail. And I don't want to have a terrible relationship with my children. I just want it to be were they can talk to me about anything they want. And it not be super awkward. And maybe they wont have to worry about getting in trouble all the time. And they wont have to be jealous how close their friends are with their mothers. Because it shouldn't be like that. I would let them do makeup before they got in high school for sure. And if they wanted to have two piercing in their ears, I would be ok with that. Because that's really not big deal. I'm just saying if they could do all that and wear what they wanted maybe their crush would know they existed. And they wouldn't have to compete with stupid girls like Mackenzie. No one likes Mackenzie anyway. And by no one, I mean everyone likes Mackenzie. okay, I'm going back to bed. . Sorry for blowing up the comment section.
Hey! I was you 10 years ago:) My mom taught me how to can and only did waterbacth. The Amish actually do everything by waterbacth, but stuff like this and meat takes hours so it is definitely worth it to get into pressure canning:) I was nervous too when I started pressure canning but it is actually so easy! My mother in law taught me how to do it and even gave me her canner:) And you are totally fine for the long comment! Most people don't cook anymore, like truly cook from scratch for every meal. Quick, frozen and processed foods have sadly become the dinner of American families :( I am trying to change that and educated and encourage parents to get back into the kitchen:) Good for you for making the right choices! You are doing the right thing!!!! I have be posting a bunch of canning videos soon so stay tuned for that. I will also be making a simple video on how to use a press canner for beginners. That video will help you a lot! :) Lastly- technically, the USDA does not approve canning pumpkin because they have not yet researched if it is safe... BUT it is:) People have been doing it for a long time with no issues. As always, make sure everything is cooked well and process this in a pressure canner. @@CollinsCountry I'm looking forward to those vids. Something funny I wanted to share with you. Now that I'm learning Maw-maws recipes. I learned that she doesn't use traditional units of measure. So I'm here like what the heck? How much is a handful? How much is a pinch? What in the world is a scoach? What I did is I got her to put those amounts in little bowls. And then I figured out whether it's a teaspoon tablespoon or less or more than that. Just thought this is funny. And I think you might think so too.
I second the pressure canning > water bath canning suggestion. Like you both I learned to do water bath canning as a kid but having since bought a large pressure canner and it is so much faster and easier and as long as you follow the directions and watch your gauge it's perfectly safe.

According to the USDA, you are correct. But according to those of us that are blessed with families that canned generations before us- they figured out how to can everything:) Literally everything can be canned...
