Brussel sprouts with Bacon in a balsamic glaze

  • Okay, one word, Scrumdeliumptious! That's the best word I can find to describe this dish. Even if brussel sprouts aren't really your "thing", they may very well become your thing once you've tried these and they are crazy easy to make. Prepare to amaze at your holiday dinner party with these.
    about 1 lb of fresh medium sized brussel sprouts (washed and trimmed)
    3-4 slices of thick cut bacon (cut into short strips)
    coarse sea salt (a pinch will do)
    2 tbsp of balsamic vinegar
    2 tbsp of cold butter

    My only complaint is this: NEVER discard the leftover bacon grease. Put it into a covered ceramic container and stick it in the fridge. It will firm up and can be used like cold butter. Spread some of it on a bagel before you put it in a toaster oven to crisp it up. I also save all of my salt pork grease when I cook that up. Pure goodness!

      @Lucy Rane When I bought my cast iron frying pan, the first thing I did was remove the pre-seasoning (nasty stuff) from it, and cooked a mess of bacon and salt pork. That was the start of seasoning the pan. Of course, I have to hang the pot from a rack in the kitchen, as the bacon grease smell attracts mice and I don't want them crawling all through my cast iron pots, enjoyng the goodness and leaving me little (unwanted) presents in return.

    I have been surfing UA-cam for some different ways of cooking Brussel Sprouts. I love the idea of caramelizing them in the bacon fat, removing them, and reducing the balsamic vinegar to a glaze. What a great idea...It will be my side dish for the gang tomorrow night. Thanks

    You got some beautiful color on those Brussel sprouts by pan frying them. Every recipe I've seen calls for oven-roasting them, but I think I prefer this method. Thanks for sharing!

    Can’t wait to try.
    I’ve tried every other way and just can’t tolerate them bc they’re so bitter.

    I don't eat brussel sprouts, but my man does.. I tried this recipe, but had to substitute the balsamic for raspberry walnut vinaigrette...It was a hit.. he loved it

    Thank you, Anna. I just found you, and subscribed. I'm assigned a vegetable dish for a birthday dinner, tomorrow. I have some duck fat, which I was going to us, to roast sprouts. But the added bacon flavor/bits just made me change my mind. I'm going to add rings of "mini" red, yellow, and orange peppers, for added crunch, sweetness and color. And, I may roast them in the oven.

    I tried this recipe and it was so delicious that i shared it with friends! I didnt have balsamic vinegar so used 2tablespoons of black vinegat and 2 tablespoons btown sugar.Its a lovely recipe im making it again this week.Thanks for sharing

    I tried it and I love it. The bacon added just enough meat for me to feel like I didn’t need any with the dish. It was filling all by itself.

    I am going to roast my Brussels sprouts first in the oven for 35- 45 minutes then add your glaze after they have carmilized should be the best ever thank you so much

    Have u ever tried the Brussels sprouts from TGIF??? They also add croutons and sliver of onions. i think they are cooked in baslamic vineager.
    And they are so addictive

      Hello, this dish suits well as a main dish or a side dish to your favorite meat. I just made these for Christmas along with prime rib, ham, and deep fried cornish hen. You don't have to serve meat with this as it's filling all by itself.

    I made it today and I loved it .. I added seasoning salt and more balsamic n a tsp of more butter with maple bacon .. I love Brussel sprouts I love to fine dine all of the time and they charge me damn near 20 for a side of them .. I got it now ., I crave them

    What about frozen Brussels sprouts? In my country there is only such a version. Can I not add water so that the sprouts does not become soggy?
