    This brings me back to my time working in Africa. Little kids lined the roads in small towns holding up bags of sesame crisps for sale. Those were made with wild honey and were fantastic!

    2 large egg whites

    I live in East Africa, and sesame seeds (called Sim Sim here) is about 50 cents a pound, so you can bet I will be making big watches of this!

    I think I'll make 2 doughs, one with white and one with black sesame, and try to make some nice patterns on the tray. Awesome video as always!

    Made these with olive oil and white sesame seeds - turned out great. Got golden brown a little earlier at about 16 min of cooking time.

    I made these with rice flour for the gluten free folks and they came out perfect! I served it with Thai pumpkin coconut curry soup. I’ve made 3 more batches because I love them.

    I made this with white sesame seeds on parchment paper. Turned out great. Very addictive. Next time I might experiment with some different seasonings.

    BTW to clean SILPAT, soak flat in sink in a dissolved dishwasher tab. Also always use printed side up so you know where to scrub.

    I bet if you took a bench scraper and pressed the edge into the sheet of crisps straight out of the oven you could make nice, clean snapping points if you wanted something regular in shape.

    I just got the black sesame seeds from a Korean market, just under $13 for a pound and a half. I will try the recipe without the sugar. I'll get back to y'all.

    What's the texture like before it cools? I was thinking you could use a cookie cutter to make the disks from a big sheet for a slightly neater presentation.

    Omit the processed white flower for the almond flower and the HELL with the white sugar, and replace the vegetable oils for light olive oil!

      @@andreyrass1393 Nigella seeds and black sesame seeds are not the same thing. Nigella seeds have a more pungent aroma and are often used in Indian cuisine.

      @@swisski Fascinating! I don't think I have ever in my life tasted black sesame consciously then. I love nigella precisely because of indian cuisine, and I have so far been using it everywhere in place of black sesame is well, apparently none the wiser 😅 Well, at least I can say it never made any recipe worse, like Chef John's strawberry whip tuile.

    I'd really wish you included celsius measurements for things like oven temperature and such. Would save a lot of people from having to whip out a calculator or going to google.

    I never dont' do the ~oll'~ tappa-tappa with stuff like this. And while there are other cooking authorities that have ingrained this practice into me, I only hear in my brain one particular sound bite when I do it, and it comes from here.
    Fun faqt: when you tap a tray onto the counter like this, you are very briefly simulating an environment where gravity is 100 times greater than actual gravity, which is why even goopy things settle out so quickly.
    I have no basis for this, which is what makes it a faqt instead of a fact. But acceleration and gravity are indistinguishable. Einstein said so. The bang is only for a split second, whereas we'd have to wait eons for things to settle on their own. Plus it breaks the adhesion of bubbles to the bottom. If anything, I recon 100 is a conservative figure. But it's still only a faqt, so don't sue me. The Q stands for "Qan this guy back any of this up?" And the answer is a freely-offerred "lol no".

      It won't be sweet but otherwise, go for it. I will make it once exactly to recipe, then I'm going to play with subbing some of the oil with toasted sesame oil and subbing maple syrup for sugar. Because why not?

    How do you know? I'm in my black sesame mood. Made the NYT black sesame cookies last week.

    Edited to add: once again... Would it kill Allrecipes to add metric measurements! Seriously having to convert everything every single time is annoying. I have all the ingredients but it's 8pm and instead of pulling out my scale I have to open a computer to do maths? Sigh.

      Its an industry standard quarter sheet pan. Just find a restaurant supply store near you. 4 or 5 dollars.

    I bow to Chef John, BUT.....the sugar in these was not pleasant. It actually toned down the sesame flavor. Just my 2 cents😊

    For Low Carb Friendly, sub fine almond flour for the white, add stevia or monk fruit sweetener or erithritol to sweeten to taste. (Remember erythritol is deadly to pets!)Substitute olive oil, coconut oil or avocado oil or bacon grease for truly delicious savory style cracker sheet. Use Sesame seeds, chia seeds, pumpkin seeds or even nuts chopped finely. This way will be lower carb but not strict keto. Enjoy! Thanks to this chef for a DEVINE recipe!❤
