    I've tried several of his recipes and as I'm mixing or chopping I hear his voice in my head. It's make me chuckle everytime. COOKING should be fun and he makes it that. Well done Chef John!

      Seeing his technique of patting the dough into a kind of sort of squared off shape before rolling really helped me get my own breads less blobby

    When I was a child an old Norwegian lady lived up the street. She would make a thin, crisp dark brown flat bread. She would give us kids some to take home. With butter on it it was so good. I don't know what was in it, but I have never seen a recipe that looked like it might be her flat bread. I have looked on and off for years for a recipe that might be like her's. It wasn't fancy, but it was so tasty!

      Maybe you've found the answer in the 11months since you wrote this comment, but it was probably some kind of Knekkebrød. Check around on google or youtube for recipes.

    I watch your video the last thing before retiring at night.Your voice acts as a lullaby ,which we in India call a "lori" - a sweet soft song a mother sings gently to put her child to sleep.

    ok john. i give up. you win! you've finally given me a reason to finally go buy a rolling pin. i never bake, but this is the best thing i've seen since they quit making rye crisp crackers, and i SO want to make this!! thank you so much for doing this, i really appreciate it! you ARE the MAN!

    I work for a chain grocery store one time in the bakery. We used to thaw frozen premade Kaiser rolls and I would roll them out to about 8 inches round. And then we would bake them in the oven and they would poof like pitas. Then we would slice them in half cut them in the triangles and season them with oil and seasoning. Wala pita chips.

    been a fan and watching your vids for years, the only chef on here(youtube) that makes me laugh on a daily basis.
    so glad years back i got into your stuff searching for pancakes, and deserts for my family. getting my 6 year old son interested in cooking and food and he watches your videos with me on weekends.
    keep on keeping on. I really appreciate it as a home cook.

    I just made these today and:
    Super delicious! But super crunchy. Roll the dough thinner than you think it should be, I ended up with some kinda thick flatbread chips but they taste exactly like a toasty everything bagel and are really good with hummus

    I used a pasta roller to make these super thin, cut them out with cookie cutters and then smashed them into the topping . They turned out perfect!

    7:00 - Try this with a couple very thin slices of fresh cucumber. It makes a surprisingly huge difference. They don't need to be pickled, since there's already a lot of brine (and maybe dill) happening already.

    Matzoh! We make it at the bagel bakery where I work. The "everything" with garlic, onion, salt, poppy seeds, sesame seeds and carraway seeds is the best.

    My food wish: We have that food truck near our office that makes the most amazing singhalese food. Maybe somethign fro you to try out :) (I can recommend a kind of sweet&sour crispy chicken thigh or the shredded coconut "salad")

    My food wish is for Chef John to show us how to make mansaf. It's a casserole-style dish I had in Palestine and Jordan, made of rice, pistachios, chicken, yogurt, and a flatbread layer at the bottom of the pan that soaks up all the juices. So delish, but I have no idea how to make it!
