    Man, its these kind of videos with neat ideas that makes chefsteps different from a lot of other food channels. Definitely, going to try this out.

      comtraya101 Yeah, because 3+ hours of your time isn't worth spending ~$100 on steak knives that have the proper heat treat to actually maintain an edge...

      800lb Gorilla I tried to do one on my own with my whetstone set and found that the technique worked pretty well, it took me about 30 minutes to finish one. I was a little worried about the edge holding, but I imagine I would only bring these out every once in a while, and it wouldn't be to hard to resharpen them. But because doing the rest seemed like a daunting task, I sent the rest of the set to a knife sharpener/maker and he did the shaping, sharpening, and hardening in a pretty reasonable time - picked them up later that day - and for cheap - much less than 100$. After all that, I still really like the idea and I'm also glad that it inspired me to go seek out a way to do it that is more convenient for me.

      +comtraya101 There is no real "hardening" to be done with the mild or stainless steel butter knives are made from, so you either got fleeced, or your are full of it. I highly doubt he case-hardened them.

      John Silverman why would you use a 220 grit stone to sharpen a knife?...the stone is doing what is designed for removing a lot of metal effectively

      That’s not the point. It would be different if they were using the stone just to re-bevel or re-apex the edge. But they used it for an aggressive reshaping and re-profiling. Use the right equipment for the right job, or you’ll completely thrash your equipment.

The true hipster crafts their own sharpening stone from a piece of metamorphic rock they found while backpacking through the lesser known mines of Japan's Narutaki District.

    I love how we can see you and hear you guys talk now, i remember when i subscribed to this channel it felt super neat (which is your greatest quality) but it felt very unpersonal.

    Gotta love you guys. Been wanting to do this for years - now that you made it legal, I actually will :)) One thing you didn't mention is how even expensive store-bought sets of steak knives are practically always serrated, and therefore destroy meat instead of cutting it. These edges will require regular honing & sharpening, but actually do a much better job!

    PROTIP: Sous Vide the knives at 90 degrees celsius for 3 days in order to temper the steel and align the molecules to allow for maximum cutting edge efficiency. Top it with a fresh salmon jous and some dry frozen flourless carrot cake dust in order to ensure the knife is seasoned to perfection.

      Actually you wouldn't want to temper these knives since the steel is already heat treated so low and doing so would bring the Rockwell hardness down even more

    Awesome idea, I've been holding off on a set of steak knives because of cost for years. I do, however, have a bunch of stones at home that I barely use. Fyi they sell extra coarse steel plates you can use to remove the bulk of the steel without having to use your good natural stones. Good investment if you plan on doing a lot of this.

    I've had an antique set of flatware that's dwindled and there are now 2x butter knives than forks or spoons. They're too fancy to be left to pasture - this is perfect!

    wouldn't it make more sense to use the grinder to get the initial shape of the knife instead of the stone?

      as long as you make sure they don't get too hot. If you heat them they will lose their edge faster.

      @@ReallyWemja it's not the right steel/temper anyways, nothing much to ruin. I laughed so hard when he said they'd be better quality that buying a set. Besides that I think it's a fun idea and actually part of how I got involved in knife making.

    Great video guys! The only thing I would caution is making sure not to over heat the knife blade as you use the grinder. Over heating would kill any temper the blade may have and cause you to have to resharpen. Going slow and dipping the blade in water as you go to cool it would be best (my rule of thumb is I should be able to handle the blade at all times with out it being to hot). I make knives in my hobby forge and I am not about to get all upset about the sanctity of a knife like some others. You took a blade that was sitting unused and gave it purpose. That is cool.

      If you want to ruin a temper you first need to have one. Flatwear isnt hardened or tempered.

    FYI.
    The metal that butter knifes are made from will never hold a proper edge. So spending all of this time to make a butter knife into a knife to cut steak is a total waste of time. Go to Sam;s and buy a set of commercial steaks knifes (brand "Daily Chef") 12 for $8.00. I had these knifes for three years now and they are still razor sharp. The blades are not smooth but serrated edge.
    Trust me I worked at a meat packing plant for many years sharpening knifes.

    Even if they don't keep an edge for many uses, it's still a cool project. If you don't eat steak a ton but like to make stuff, this is a cool idea. Plus, the metal probably isn't as bad as some people think, since they're using older knives of higher quality.

      I think you have no idea. The steel wont hold any edge, because it want made to hold an edge. Flazwear isnt made of carbon steel so its soft.

    lol, that was my parents wedding silver set. They were married in 58. The set came from Montgomery Wards. I think you have good taste. she also had my grandmother silver set that was real silver. I picked my parents set over the real silver set when we split her estate up with my brother. My wife was livid that I didn't pick the real silver vs plated. Who cares, it what your personal taste is. Now I am going to put the butter knives to good use. Thx

    I bought a nice steak knife set off of Amazon. 12 solid stainless knives with big handles for less than $20. Sure, it doesnt have as much character but I saved an afternoon of sanding down old knives lol

    This is genius... I don't think Imma make one but the knowledge that you use steak knives at an angle to CUT instead of SLICING is really huge... I'm gonna be a better steak eater next time I eat one :D

    hmm.. that give me ideas, i been looking for new steak knifes since the once i have is some my dad got and they are atleast 30 years old now, but getting new steak knifes you can sharpen yourself on a stone is not easy to find, well they are but they dont look good and i dont like the fell of em in my hand, so super nice tip to go antik hunting and just sharpen some butter knifes you like.

    I have some very old school steak knives...they look like old scalpels, and they are awesome. But if I didn't have those, this would be a great method, except for ruining that nice stone to shape the knife.

    Nice idea, but butterknife metal will wear down after just a few uses. As long as you are aware of that, when putting all the work into grinding those knifes into some sharpness, then its just to go.

    I'm pretty sure that is a dinner knife.
    A butter knife is short and stubby and is one of those things in a silverware set that never gets used except in nice restaurants.
