  • Let's make my favorite cookies! This recipe is low sugar (about 1 cup in all 44 cookies!) and made with freshly milled flour. The freshly milled soft white wheat adds nutrition and substance, slowing down the absorption of sugar in your body. These cookies are made with real, simple ingredients and taste AMAZING. Enjoy!

    My recipe:
    3.5 cups freshly milled soft white wheat flour
    1.5 tsp baking powder
    1 tsp baking soda
    1.5 tsp salt
    1 cup butter, room temp
    0.5 cups white sugar
    0.5 cups brown sugar
    2 eggs
    2 tsp vanilla extract
    2 cups chocolate chips
    Combine flour, baking powder, baking soda, and salt; set aside.
    Cream butter and sugars.
    Add eggs and vanilla.
    Add dry ingredients to wet ingredients and mix well.
    Add chocolate chips. Mix.
    Bake at 350F for 13-17 minutes.

    I found that using my regular chocolate chip cookie recipe but with freshly milled barley flour makes cookies that my kids really love. They weren’t a fan of wheat. What I did was measure out the all purpose flour I would normally use in the recipe, and then weighed it in grams. I used an equivalent of barley by weight. It works so well!
    Most of us also love the Ranger Cookie recipe from Bread Beckers, except we don’t do the nuts and add a cup of chocolate chips. These are my favourite!

    Those look outstanding.
    I’m milling and having a ball making bread of various kinds and muffins but cookies are on my to do list with the holidays coming and family gatherings. Your recipe will be the first. Wow!!!
    I’ve seen photos of cookies from home milled wheat but they were not so appetizing looking. Your photo….. oh my… Those look stupendous.

      Good to see you using the bread paddle. I have the Bosch but have only used it for the bread. The muffins I make, I do those by hand. I did purchase the cookie beaters for the Bosch but good to see the paddle works.

    Very helpful! I do the same (bake at night once the kiddos are in bed.. it's a stress reliever for me:) and try to reduce sugar as much as possible. Definitely gonna have to try those sheet pans, muchas gracias!!

      @@homemakingwithjoy and by the way, my husband has a sweet tooth and he thought they were wonderful. He never noticed a shortage of sugar. Also I only had a cup and a quarter of mini chocolate chips and they were still fabulous.

    Made these today and they were perfect. The only thing I don't like is the "grainy" taste at the end of some bites. I used hard white as that is all I have. Does it make a difference using soft white berries?

    Any recommendations on how to measure freshly milled flour? If by weight, how many grams? Or can you just scoop and level??

      It is easiest to measure the wheat berries in grams, but most recipes, like this one, just use cup measurements. When I got my mill, I experimented with how many wheat berries would create one cup of flour so I wouldn't have to measure in the future. For me, 1/2 cup + 1 Tbsp of wheat berries = 1 cup of freshly milled flour. Otherwise, you can mill some and scoop and level. :)

    If you put them frig for an hour or so to chill they don’t flatten out I noticed .. An I made my dough an scooped them out an flash froze an put them in freezer bag stuck them in the freezer ..
