- Restaurant-Style Palak Paneer:
*Silky Smooth Restaurant-Style Palak Paneer Recipe*
*Ingredients:*
1 bunch of spinach
5-6 garlic cloves
2 tbsp oil (divided)
1 sliced onion
1 tsp ginger paste
1 tsp garlic paste
1 medium tomato, sliced
2 dried red chillies
1 tsp salt (for sautéing onions)
2 green chillies
2 green cardamom
2 cloves
1 inch cinnamon
1 bay leaf
1 tsp Kashmiri red chilli powder
1 tsp coriander powder
1/4th tsp haldi powder
Salt, to taste
1 tsp kasuri methi
200g paneer
1/2 tsp garam masala powder
2 tbsp milk or cream
*Instructions:*
1. *Blanch Spinach:* Boil a bunch of spinach with 5-6 garlic cloves. Transfer to ice-cold water to retain colour.
2. *Sauté Aromatics:* Heat 2 tbsp oil, add sliced onion. Cook until pink. Add 1 tsp ginger paste, 1 tsp garlic paste. Add 1 medium sliced tomato and 2 dried red chillies. Sprinkle 1 tsp salt. Cover and cook until tomatoes soften.
3. *Prepare Paste:* Grind the sautéed mixture into a fine paste. Blend blanched spinach with 2 green chillies.
4. *Spice Infusion:* In the same pan, add 2 tbsp oil, green cardamom, cloves, cinnamon, and bay leaf. Add the tomato paste. Stir in 1 tsp Kashmiri red chilli powder, 1 tsp coriander powder, and 1/4th tsp haldi powder. Cook until oil separates.
5. *Combine Spinach Paste:* Add spinach paste to the pan. Mix well. Add salt to taste, 1 tsp kasuri methi. Let it sputter. Cover and cook for 1-2 minutes.
6. *Paneer Addition:* Introduce 200g paneer. Gently mix. Sprinkle 1/2 tsp garam masala powder. Pour in 2 tbsp milk or cream. Cover and cook for 4-5 minutes.
7. *Serve:* Your creamy, flavorful restaurant-style palak paneer is ready to be savoured!
