I have thought about this video every few days now for over a month. I have made the sandwich more than once. I've built other meals based on its core idea. And your narration over it is hauntingly beautiful. That sticks with me the most.

@SandwichTribunal couldn't find kaiser rolls so I went with onion bulky rolls instead, added a few pieces of genoa salami fried up with the mortadella and topped it all off with thinly sliced kosher dill deli style pickles.
If my memory doesn't fail me, in Bar do Mané the sandwhich is not made with brioché but a french bread. The french bread is crunchier, so I think it works better for this recipe. Loved the video, got yourself a subscriber.

bologna is not the same as Mortadella, but they probably both taste great.
you gotta try the Italian version. Mortadella is fattier, and lends itself to the frying aspect of the dish. A must try.

Also, one thing that goes really well with this recipe is pickled onions.
I just made this, it was certainly good and I enjoyed it, but I don't think I'd say it was great.
