One thing you haven't clearly mentioned. On Full Service Airlines Economy class is rapidly becoming same as Low Cost Airlines. Narrow seats, pay for legroom, pay for seat selection, reduced baggage allowance, reduced in flight entertainment, reduced amenity pack (when provided) worse and less food, reduced number of services (snacks and drinks). Further they now oversell each flight about 15%-20% so that on each and every flight someone gets offloaded and unless that passenger knows their rights AND are ready to fight and argue and stand in queues the airline does not offer compensation. Next, it used be a rule if you have 5 hours layover they must provide meals, over 8 hours they have to provide hotel. None of those are now offered. Finally, airlines made losses during Covid therefore they also reduced capacity. After Covid ended they dramatically increased their fares saying partly it's to make up the loss and partly because now they are undercapacity and unable to meet demand: they need time to rebuild. Yet two full years after the pandemic ended and with air travel fully recovered, even fuel prices are lower but fares did not come down.
All of this is to try to push you towards buying Premium Economy which as you pointed out is the worst deal for the passenge.
Secondly Business Class used to cost about 50% more than Economy and often there was the possibility of free upgrades. Now it costs 300% of economy and strictly no free upgrades, even if Business Class is empty.
At the end of the day customers are no longer treated as customers, they are taken as hostages and air travel far from being a good experience to look forward to has become q punishment to be endured. That's the modern airline industry.

Self transfer flight with more than 3 hours layers are cheaper and gives chance one more city in span of 6 to 8 hours break.
sometimes flights are cheaper in summer time from uk (ibiza, palma. split, crete etc) but hotel and care hiring cost will be sky high so consider overall cost before buying tickets.
sometines buying one way and return flight separately reduce the cost and making 2 reservations to split your family as well
