- This is an elegant, velvety take on a traditional skillet-supper, perfect with mushed potatoes or a mound of fluffy white rice. Cooking this fricassee with the aperitif known as dry vermouth instead of the more traditional white wine results in a slightly sweeter and more aromatic sauce than you would ordinarily get. But white wine will work as well. Chicken fricassee is the original French comfort food and it is utterly divine. It may look fancy, but this complete meal-in-one is made with humble ingredients and cooks all in one pot for an easy dinner any night of the week!! INGREDIENTS:
Yield: 4 to 6 servings
8 chicken drumsticks
Season with salt and freshly ground pepper
2 tbsp butter
1/2 onion
1 clove garlic
2 tbsp Flour
3/4 cup / 180ml Dry White Vermouth
1/4 cups/ 60ml chicken broth
1 Bay leaf and 2 Sprigs fresh thyme or 1/2 tsp dried
1 carrot cut into fine, julienne strips
1 Leek, cut into fine, julienne strips
1/2 cup/ 120ml heavy cream

This is a favourite - it brought back memories of my travels in France where small village restaurants would offer this fare. Best food ever. I had to make it without leeks the first time and substituted shallots instead and that worked also.

I made a version of this tonight. It was fabulous. I didn’t have leeks, so I used the centre stalk of broccoli, and sliced it like the carrots, in julienne strips. For our starter we had traditional Swiss cheese fondue.
This is a keeper recipe for me.

Looks delicious!!! Just a note. These are called drum sticks, not thighs. Although I am sure that thighs could also be used, or even 4 whole legs, in place of 8 drumsticks. Thanks for sharing.

I became an extremely good home cook at a young age and to this day ( age 59), I’m still in the kitchen preparing food for my kids and grandkids. ( and LITERALLY dozens of others every week because “ for fun”, I got a job at a local pizzeria/ dive bar ) 😅

This is a delicious recipe, but in my hands I found it a bit tough and still a bit pink at the end of cooking. Suggest perhaps longer cooking times and a more tender cut. Maybe thigh rather than drumstick? We love your recipes! Please keep them coming.
