  • African chicken peanut stew is a delicious and versatile traditional dish enjoyed by many Africans all over the world. This hearty stew is made from simple ingredients and is low carb and keto-friendly!

    ✅ INGREDIENTS
    - 1.5 lb chicken thighs
    - 1/2 cup tomato sauce
    - 1 red bell pepper, chopped
    - 1/2 cup peanut butter
    - 1/4 cup olive oil
    - 1/2 onion, chopped
    - 1 tsp cayenne pepper
    - 1 tsp bouillon powder
    - 2 cups chicken stock or water
    - 1 tsp black pepper
    - 1 tsp salt or to taste
    ✅ INSTRUCTIONS
    - Wash the chicken under running water, then pat dry with paper towels.
    - Mix some salt and pepper in a small bowl, then rub it on both sides of each chicken part.
    - Pour some olive oil into a large skillet and then brown the chicken pieces on both sides on medium-high heat.
    - When sufficiently browned, remove the chicken thighs from the oil and set them aside.
    - Pour a bit of olive oil in a large soup pot and when heated, add the chopped onions and bell pepper. Sauté for a few minutes on medium heat.
    - Next, add the tomato sauce and spices (except the salt), simmer for a few minutes, and pour in the chicken broth.
    - Add the chicken pieces, give it a stir and simmer for about 10 minutes.
    - Taste for salt and add some if you need.
    - Finally, add the peanut butter into the pot and stir till it is well mixed in.
    - Cook till the stew becomes thick.

    It looks very nice.
    I am from Guine-Bissau (west Africa) and peanut butter sauce is one of our traditional food.
    One advice; do not to add extra oil to the sauce since the peanut itself is very oily when cooked properly as its always and should be visible on top of the sauce and in some cases you can even scoop extra oil and use for another meal. Therefore , frying the chicken etc will add more oil, and that can cause nausea after eating.
    Do add smoked or raw chicken , meat or fish, your seasonings and vegetables if wish to the sauce at their own times (will explain bellow). Or seasoned and cook the chicken separately in another pot and leave aside. Adding bit of 🍋 makes a difference to the taste and hence it prevents nausea due to the 🥜 butter natural oil.
    In a separate pot, place the peanut butter with chopped ripe fresh tomatoes or tomato puree add plenty of boil or hot water from a tap (⅗ of the pot), "boil water help to desolve it fast" and leave it to boil. However, keep steering to prevent stickiness to the bottom of the pot which later burns the sauce and also to avoid the foam to drip out of the pot once starts boiling, as it contains the oil needed for the sauce. When stopped foaming, leave it to boil until the sauce goes down to half of the pot, then add the cooked seasoned chicken etc into the peanut butter sauce pot and leave to cook at least for another 20 minutes depending on the quantity.
    The peanut butter sauce takes long time to cook in order to avoid indigestion or even diarrhoea if not cooked properly (it's either you eat it raw or coop well, but NEVER half way)!
    Note: Plain cooked rice is better with 🥜 butter sauce.
    Also remember to use bigger pot for a comfortable cooking as it goes through different stages.
    The process required a lot of steering from the beginning to end to even when to foaming stops in order to avoid burning to sauce once sticked to the pot...
    I not here to criticise as I know and respect that each country and culture has their own way of doing things.

    Just made this. It’s sooooooo good! And pretty easy! With pantry staples! Paired it with fufu.
    Alterations:
    - did not have chicken bouillon so I used poultry seasoning
    -added 1 tsp coriander and chili powder
    -added garlic

    My wife is from the Philippines and we make Kare Kare all the time.
    Nothing better with rice than a rich spicy peanut(ground nut) stew.
    Not a criticism but an observation. No spices, no ginger? When i think of African I think of exotic spices.

      You can add any of your favorite spices, but the cayenne pepper and bouillon powder packs a punch in this recipe.

    Very nicely explained and edites video, i like it.. regarding recipe: i like how it looks and im interested trying.. i will ust make sure i use chicken thighs without skins becasue i admit it looks a bit greasy for my taste

    Looks amazing but I had a question, everyone I’ve ever known has told me washing chicken is bad because it spreads salmonella everywhere, is it ok to cook this without washing the chicken?

      I always wash mine and leave it in a colander to drain. I can’t advise you to eat unwashed chicken because that also carries a risk.

      I was raised on washing all kind of meats, from a family of 8 from the South and we never got sick, chicken is so nasty with all that fat and slime up under the skin and feathers on it too Yuck! Who don't want to wash their chicken. 🤔

      By being cooked salmonella dies, so washing the chicken shouldn't be a problem.

    Is the tomato sauce passata? Or ketchup

      I used ketchup but I think the recipe needs a bit more tanginess, so I'd suggest passata, or half-ketchup half puree or something like that

      Only use purée tomatoes or normal tomatoes and Never add ketchup.

      You can blend peanuts and use it as a paste, but I use peanut butter to save time.
