The lady shown at 5:13 ist not Cristen Kauffman at the age of 61, it's Christine Kaufmann! She was a German-Austrian Actress, known also for her marriage to Tony Curtis from 1962 to 1968. Christine has quite a record of movies she played in, but "Back To The Future" was not on that list.
