So very happy I came across your channel. I am 76 years old who became a widower recently and am finding it so hard to cook for just myself. Thank you for stretching your main meals into totally new meals.
I've been cooking for just myself for over 30 years and like you, I rarely measure unless it's in baking, you just get a sense of what's right. No buttermilk, add a few drops of vinegar to your regular milk and let it sit for about 10 minutes, you have buttermilk. Also on the meatloaf, my favorite way to have meatloaf is a sandwich the next day, so I always want leftover meatloaf. LOL I usually make my meatloaf in muffin tins and freeze for later use. Glad to find your channel, always looking for ideas!!
@MimiG2182 when my husband is home I always make a bigger meatloaf so he can have a meatloaf sandwich for lunch the next day. He loves a good meatloaf sammie! Thank you for watching!

I love blackeye peas! I cook mine from dry with a discount ham bone in the instant pot and eat them all week long. I either have corn bread or rice even corn possibly are endless.

@Catsmeow90 I'm not exactly sure what you're referring to, but I'm going to guess it's what I put in my cast iron skillet in the beginning of the video. If it is, that was oil. Olive oil to be exact. I'm from the United States, in the southern part, and I'm sure I have a little bit of a southern accent🤣Sorry if I confused you🙂

@loisrohling5277 they aren't hard to clean if seasoned properly in the beginning. I have 2 of the 6 inch. One is dedicated for only cornbread. The other I cook anything in.

@blancagonzalez759 it may have accidently got cut out. You can throw your browned ground beef in, any time during the process. While you're putting the tomatoes and veggies in, is a good time to add it.🙂

A good substitute for buttermilk is one tablespoon of vinegar (I use ACV) or lemon juice to one cup of milk.

Use heavy cream instead of milk in your mashed potatoes. You will be amazed at the difference it makes
