I get so discouraged at most cooking channels because they post recipes for huge families. I’m the only one in my house now, and it’s frustrating to try and find recipes for one or two. Thanks for covering our needs
I am so happy that I found your channel. I will be 60 in Feb. and I have my 33 differently abled daughter living with me. We don't eat a lot so channels like your help us out so much. God bless you and yours's. Have a blessed Christmas.
Just came across your channel and subscribed! Great recipes thank you! From one silver haired homemaker to another LOL! Christmas blessings on you and your family Kiddo! 🌻🐛🌿💚🙏💕👵
I like the sound of all three of these recipes, but I'm trying to get more veggies into my diet especially for high-fat meals like these, so I think I'll be sauteing some thin-sliced celery, diced onion and diced green pepper for the chili, and maybe some corn. For the casseroles, I'll probably start again with sauteing onion and celery, and then I'll be adding some broccoli florets and/or cauliflower rice, and some green beans might be good in the last one. Maybe some diced sweet red pepper for a pop of color. I never seem to have frozen peas when I want them, but they'd be good in the casseroles too. Raw diced onion and peppers freeze well, so I do up a big batch at a time and that saves a lot of time. Love how quick these recipes are!
Great recipes! I've got chicken that I've canned myself and they will work just right for these recipes. You are absolutely awesome for doing all that you do!! Blessings y'all!
I have been putting a small can of chicken in my omelets, with green onions, grated cheddar cheese, about 3 eggs, and a spoonful of mayo, that makes it extra Fluffy instead of milk. Yummy 😊
Wow, I made the million dollar chicken casserole, and it was so good. I made 2 substitutions since I didn't feel like running to the store. I used french onion dip for sour cream 😂 and nacho cheese for mozzarella. It was so creamy and paired great with tortilla chips on the side.
I make a similar recipe, but instead of individual spices, I use half a packet of my favorite taco seasoning. Sometimes, I add a can of Mexicorn or a can of Rotel if im feeling sassy and spicy (but no longer white chicken chili). Regardless of what I add in, all leftovers are cooled to room temp and put into quart size freezer bags and frozen flat for storage. So yummy!
I'm excited to try all 3 of your recipes in this video! Since you mentioned how versatile canned chicken is I've created a file just for canned chicken recipes 😊. I hope to come across canned chicken patties, never had them but I'd like to make them for the freezer. Thanks for sharing --Virginia V from NYC ❤
I happened upon your channel, I have never come across canned chicken but you were sure inventive and I can adapt without the canned chicken, thank you
Good morning! First time viewing your channel!! Wow!! All three recipes look amazing!! Believe it or not I’ve never eaten canned chicken!! And I’m 77. Now I would make all of them for me, but the rest of the family would turn up their noses!! But they all looked yummy to me! Thank you for sharing!
New subscriber here 👋. I make my chili like yours, sometimes I’ll add green salsa if I don’t have peppers. The casseroles are new to me so looking forward to making them. I’m a grey haired lady as well, or as I like to say - I’m blonding!
I'm going try switching out the rice for hash browns. But to say I'm making cheese tuna casserole. Because my friend asked for one. Its so funny because didn't like fish till I made cheesy tuna casserole and catfish chowder. She loved both of them.
I’ve found the water off the canned chicken isn’t a broth and has a faint metallic taste. If you can’t taste the metal go for it, my sister and one brother can’t, my mother and I both find it not pleasant.
I would think you could. I personally wouldn't freeze the one with the rice in it, but that's a personal preference. I don't like the texture of rice after it's been frozen. Some people don't mind it, so it works for them.
It just came on my feed & im so blessed by watching how wonderful … can I put those casseroles together in a croc pot? ( BTW I have physical challenges & my mobility is shaky) if I used a croc pot would I be able to have crunch in the toppings?
I'm sure these could be made in the crock pot. The steam from the heat and being closed up may not allow for the topping to be crunchy. With the one with the French Fried Onions, I would think you could just add those to the top after you dished it up though. It would still be good that way.
I know you can freeze the chicken chili. I personally wouldn't freeze the one with the rice in it. Not that you can't. I just don't like the rice texture after it's been frozen. As far as the broccoli in the second one, I don't see why you couldn't add broccoli to it. I think that would be delicious! I personally would add frozen broccoli, but would make sure it was thawed first so that it didn't add any unnecessary liquid to the dish as it cooks.
If you drain the canned chicken into your measuring cup you can use less boullion ppwder. The water in canned chicken is just chicken broth. If you are worried about sodium...well it's not much different than the bouillon anyway. 🎉🎉

Thank you! I think the Million Dollar chicken casserole was probably my favorite out of those 3. I love to use canned chicken for chicken salad.
Finally!! Someone who consistently cooks for one person. I just found your channel and I plan on watching all your videos.
@dawnpren2559 Thank you for watching! I do cook larger quantities sometimes, but I try to focus mainly on cooking for one.
I've got some home canned chicken to use. These recipes will use it up. They look so yummy.
Enjoy!
I love the recipes. I wouldn’t have drained the chicken for the chicken and bean chili.
Thank you!
I wouldn’t either, it’s full of flavor. I wondered why people drain the chicken for a soup?
Thank you for including the written recipes.
You're welcome. I try to when I can!
Some great ideas for chicken. Thanks for sharing them.

I would have put the chicken juice form the can as part of the rice liquid to give it more flavor.
Yes, that's definitely an option .
That broth has nasty GMO modified corn starch so you are better off draining it...

What's the name of these dishes??
They are in the description box along with the recipes.
Are these freeze able? And for the 2nd one if you wanted to add broccoli would you use fresh or frozen/thawed?
I know you can freeze the chicken chili. I personally wouldn't freeze the one with the rice in it. Not that you can't. I just don't like the rice texture after it's been frozen. Do you have any canned tuna recipes?
I'll be working on some at some point. I have a lot I want to do, but haven't gotten around to it yet.
Do you do anything w canned beef or pork? I bought some but I afraid to use it!😮😅

Would prob serve over noodles or rice.

Left over rice could be used instead of the minute rice
Oh yes, if you have leftover rice, of course, use that instead. Always use what you have available😊
I have a problem with the cheese pull on anything but pizza
