    That "million dollar chicken" looks amazing. Another often forgotten thing for canned chicken is simple chicken salad, Mexican chicken salad, or chicken melts on English muffins

    I like the sound of all three of these recipes, but I'm trying to get more veggies into my diet especially for high-fat meals like these, so I think I'll be sauteing some thin-sliced celery, diced onion and diced green pepper for the chili, and maybe some corn. For the casseroles, I'll probably start again with sauteing onion and celery, and then I'll be adding some broccoli florets and/or cauliflower rice, and some green beans might be good in the last one. Maybe some diced sweet red pepper for a pop of color. I never seem to have frozen peas when I want them, but they'd be good in the casseroles too.
    Raw diced onion and peppers freeze well, so I do up a big batch at a time and that saves a lot of time. Love how quick these recipes are!

    I make a similar recipe, but instead of individual spices, I use half a packet of my favorite taco seasoning. Sometimes, I add a can of Mexicorn or a can of Rotel if im feeling sassy and spicy (but no longer white chicken chili). Regardless of what I add in, all leftovers are cooled to room temp and put into quart size freezer bags and frozen flat for storage. So yummy!

      I would think you could. I personally wouldn't freeze the one with the rice in it, but that's a personal preference. I don't like the texture of rice after it's been frozen. Some people don't mind it, so it works for them.

    It just came on my feed & im so blessed by watching how wonderful … can I put those casseroles together in a croc pot? ( BTW I have physical challenges & my mobility is shaky) if I used a croc pot would I be able to have crunch in the toppings?

    • @SilverHairHomemaker
      @SilverHairHomemaker  Місяць тому +1

      I'm sure these could be made in the crock pot. The steam from the heat and being closed up may not allow for the topping to be crunchy. With the one with the French Fried Onions, I would think you could just add those to the top after you dished it up though. It would still be good that way.

      I know you can freeze the chicken chili. I personally wouldn't freeze the one with the rice in it. Not that you can't. I just don't like the rice texture after it's been frozen. As far as the broccoli in the second one, I don't see why you couldn't add broccoli to it. I think that would be delicious! I personally would add frozen broccoli, but would make sure it was thawed first so that it didn't add any unnecessary liquid to the dish as it cooks.
