I learned this technique years ago working with an Italian chef! I love how neat it makes the plate!

I can never get my pasta to stand up like yours. Any advice?

Hi there! The best way is to use a medium sized ladle and large culinary tweezers or tongs. Use the tongs/tweezers to pick up the pasta. Let the pasta hang and try to keep as many pasta strands from overlapping each other. Pinch the tweezers lightly and insert into the ladle and twist. Once you get a nice shape then slide it out into a plate. It takes a little practice but its not the hardest thing to do in the kitchen. Here is another pasta video with more of the tweezer and ladle technique shown. ua-cam.com/video/gzf9U11W6Hg/v-deo.html
      Happy cooking!
