Potato & Broccoli Medallions IKEA Style | IKEA GRÖNSAKSKAKA by You and I Can Cook

The potato & Broccoli medallions I ate at the IKEA restaurant in the Sweden Pavillion at EXPO 2020, Dubai inspired me to prepare this at home. They are very delicious and can be served as a side dish. I hope you enjoy the video.
Ingredients:
2 large potatoes boiled or steamed and mashed
1 cup Broccoli blanched and pulsed in a blender or chopper
one half white onion chopped and sauteed in butter or olive oil
1/2 cup shredded mozzarella cheese
crushed pepper
Salt to taste
Mix everything to combine, shape into Medallions and air fry or bake in the oven at 180 C for 18 to 20 mins.

I made these, very delicious, just like the IKEA ones. I used a sharp cheddar and some cream to bind the potatoes. Putting just the right amount of salt is key to bring out the taste, just sample the mix before adding more salt. Potatoes absorb quite a lot of salt and it is necessary to add some, you can't skip it. Black pepper is also a nice spice to add. Instead of onions, I sautéed one minced leek and aded it to the mix.
