Chicken & Seasoning -
1 Tbsp (40ml) - Olive Oil
2 - Chicken Breast, Butterflied & Halved
1 tsp (2.5g) - Garlic Powder
1 tsp (2.5g) - Sweet Paprika
1 tsp (1.5g) - Dried Oregano
1/2 tsp (0.5g) - Chilli Flakes
Seasoning To Taste
Pesto -
1 - Garlic Clove
15g (0.5oz) - Parmesan Cheese, Freshly Grated
10g (0.5oz) - Pinenuts, Toasted (Use alternative nuts to cut cost)
1 - Large Bunch Of Fresh Basil, Picked
2 1/2 Tbsp (50ml) - Extra Virgin Olive Oil
1/2 - Lemon, Juiced
Seasoning To Taste
Extra Virgin Olive Oil To Adjust Consistency
Bread & Fillings -
2 tsp (10ml) - Olive Oil
2 - Ciabatta Rolls or Bread of Choice
1-2 - Tomatoes, Thinly Sliced
4-5 - Mozzarella Slices Per Panini
Seasoning To Taste

The way you went about explaining how each spice affects the chicken... gawd I could taste the final dish just because of that. Pesto subs are on my top 3 chicken sando of all time, others are chicken-parm sandwiches and chicken fajita in garlic bread (this one is the true college student meal 😂). Good show!

I used to get a similar sandwich from a local restaurant that closed a few years ago. I miss it so much! The only difference was they used marinated sun-dried tomatoes. I will definitely be making yours! Looks fantastic!!!

That looks awesome Jack. I have seen cooks place another heavy pan or a weighted baking sheet over the food to act as a press. I haven't used lemon juice in my pesto but will give it a go.

Chicken pesto and mozzarella has been my favourite sandwich for years. Will give this recipe a go as your sandwich looks amazing. I think Focaccia is the best bread to have this with though (or ciabattas)

This looks amazing. I am going to lightly toast the bread in a dry pan. I think it will make the bread more robust and help it to not be moist from the pesto.

I make one similar, I brown the chicken, top with pesto, mozzarella and tomato. Finish cooking in the oven then drizzle with a balsamic reduction!
Soo tasty and a bit different because of the lemon juice in the pesto. Though I wouldn't recommend to blend the basil and cut it instead. Very good recipe❤❤

Just a hack, while toasting any bread in the pan, cover it up with the lid. What it will do, the bread will be crusty outside and supermoist inside.
Due to this you will get crunch without hurting your mouth.

This looks amazing. I would change a few things for myself - I'd probably brined the chicken breast for an hour first to make it more juicy, I think it would be great for a sandwich like this. Or perhaps marinated it with some acid and umami source for an additional kick of flavor, although maybe it would interfere with the taste of pesto... Still, very nice job

Hello Chef. Im your patron from patreon and really appreciate this recipe. In the video you said it was 2 TEA SPOONS (10ml) of Olive oil, however in recipe there is 40ml or 1 TABLESPOON (my tablespoons are only 10ml each).
Can you clarify how much oil is needed? Thank you
The only suggestion I have is more garlic cloves in the pesto!! 1 is NOT enough for me 😭😭
Each to their own. 1 is enough to not overpower anything in my opinion
