I did this with criminis brown mushrooms I had went to a free food place and they were giving away these bags of mushrooms I just stuffed the pot put it on high waited for it boil turned off the boiling water put the mushrooms in & let them soak in a pan* I put Unisalted butter olive oil and salted butter 🧈 it was so delicious I had this seasoning salt with garlic and parsley it was a bunch of dried herbs I added this to the oil and onion powder just a pinch and they were so delicious like seasoned ground beef * Next time i want to be able to do this the right way I was in ahurry and it was brown mushrooms I wasn't even sure if I should share what I did yet it was similar yet diferent cause I didn't have fresh herbs * When I have a little more money I want to do this like this with pesto just like a spoon of pesto sauce * This is one of my favorite recipes * I realy enjoy Chef pasquale he is such a kind man * 👨 💙 He has realy taught me authentic cooking .. I just can't aford the jars and the olive oil that has to be used * Lemons are so dificult to find I try to buy organic which quadrupled my grocery bill* I also added the lemon to the pot * They are so delicious * I'm going to ise them in my spaghetti sauce Amd when I male potatoes and scrambled eggs and bl pepper and I'm going to add my mushrooms yum! I was looking at pasquales mushrooms and chicken recipe I want to say chicken cachetore yum! That is another on my list * I had to add to my olive oil and decided Unsalted and salted butter I feel my arteries creaking lol! Like a old squeaky door * lol! I added the pepper too* that realy added alot of flavor too*

My mom makes mushroom salad exactly like this. Both during summer and also as a nice side dish for winter meals. You can also let the mushrooms marinate in the refrigerator in this dressing. Very delicious

Some say they have tough cell walls that make then indigestible when raw but I've never had an issues and I eat them often, love them in a salad raw. I guess it depends on the person eating them.
Hello dear Pasquale. My husband makes carcioffi sot olio the same way. The lemon in the water takes away the black oxidization & it is not to strong like vinigar. Mushrooms for commercial sale are grown in dark basements or buildings and they are grown in Topsoil mixed with sphagnum Moss and very small wood shavings. These are not wild mushrooms and there are really no wild mushrooms anymore that you were going to purchase. Most people who forage for mushrooms sell them to restaurants or eat them themselves. In the old days yes they grew the way you explained and people would pick them wash them and eat them and there wasn't a damn thing wrong with them. Your comment is inappropriate to this man and Unbecoming. Obviously mushrooms do not taste like beef. SMH

If you stir lemon juice and olive oil together vigorously, you can get it to emulsify, which is nice for a dressing.
