How to Cook Beans and Potato Porridge

  • This beans and potato recipe is a great meal for breakfast, lunch, and dinner, it is meaty, mouth watery, and filled with all goodness.
    Ingredients:
    3 tubers of sweet potatoes.
    2 cups of white kidney beans (cannellini beans)
    300g of mackerel or minced meat
    1 medium onion, chopped
    1 teaspoon of ginger
    3 cloves of garlic, minced
    1 teaspoon of curry
    2 cooking spoons red palm oil, optional
    2 tablespoons of crayfish (ground)
    1 medium bunch of spring onions or ugu leaves,(spinach or kale)
    2-3 seasoning cubes
    4 scotch bonnets or chili pepper
    A small inch size of Iru/Dawadawa(locust beans)
    Salt to taste
