I believe it's because your baking powder is not "absolutely fresh" as dicribed. Mine did the same thing. Had to make recipe several times with different baking powers to get it working good.
Thank goodness we have Martha in this world!

Hi Julie! Butter here in the States comes in 1 pound packages. Each package has 4 sticks of butter. So each stick is a quarter pound!

Yes! Rice vinegar, white vinegar or apple cider vinegars are all fine substitutes.

Scones and biscuits are almost tge same..biscuits are lighter and fluffier.

Buttermilk works better. Why not use the real thing if you have it?
If your store doesn't regularly have at least two types of buttermilk in the cooler, you're living in the wrong town. Just sayin'
