      लखनऊ में चौक पर मिलता है। साइकिल पर भी बहुत बिकता है लखनऊ की सड़कों और गलियों में। अब ये मक्खन का दूध भी बेचते हैं, जो नीचे जमा होता रहता है। चिल्लाते हैं.....मक्खन मलाई !

      This is only a summary and not a translation. Only the uploader can add those, but I wanted to get this info out there.
      tl;dr: I used to have 'Makhan Malai' as a kid when I used to visit one of my grandparents in Lucknow. Makkhan Malai literally translates to Butter-cream. It is its own thing, and I would not try to describe the texture by using any comparision to whipped cream or frosting. But tastes and feels sooo good. It is popular in North India, but is only sold in a few cities.
      long: In the lucknow context of Makkhan and Malai, both are immediately obtainable from milk.
      The cream accumulating over boiled milk is the malai. Milk straight from the buffalo yields more malai than cow-milk or pasturised, store bought milk.
      In this sense, all makkhan (Butter) must be made by churning either the malai (cream) or only the watered down milk with all the malai in it. Technically, a small amount of malai taken from buffalo's milk is sufficient to make butter if churned the right way with a spoon. But, if you don't get the technique right you might be churning at the malai or milk all day and nothing happens.
      The style of churning as shown in this video is what the craftsmen call 'malana'. The trick about this, or any kind of churning is in anticipating how the milk at hand needs to be churned to yield more of the desired product.
      The churning technique shown here requires skill developed over a lifetime. The craft has been passed down family generations. The craftsmen here are third generation makers of makkhan-malai. Current machines do not give these craftsmen the required degrees of freedom to make this froth, so the Makkhan malai must be made by hand. The process has not changed much over the last three generations in his family.
      The craftsmen start at 3 or 4 am in the morning. If you would ask them, they would tell you that the foam is best made and done with the first mist of dawn.
      Ice is used early on in the froth collection process to increase the shelf life of the foam for upto a day.
      Once most of the foam has been collected, and pressed into itself to thicken and add body. Then it is flavoured and colored with spices such as kesar (the yellow liquid that they pour on the foam is kesar dissolved in water), elaichi and other names of spices that i forgot; Sugar to add sweetness.
      In Delhi, this preparation is topped with edible gold or silver foils and finely chopped almonds, cashews, and pista nuts and fine bread or biscuit crumbs to add crunch and is commonly called "Daulat ki chaat" (lit. Snack of wealth, figuratively Snack of the opulent).
      You might catch it around Jama Masjid in the winters.
