- This week: the massive stags of New Zealand. We are looking at deer hunting and management all over the world thanks to our sponsors. In the first of our series 'Planet Deer', Scottish deer expert Niall Rowantree visits South Island, which has turned the red deer from a pest into a major industry. He meets the Fraser family, who farm and hunt the animal, and Jonathan Wallis, son of Sir Tim Wallis, who practically invented New Zealand deer. That's not all. Cai Ap Bryn shot a fallow buck in last week's show and promised to show how to make deer heart wraps - so here they are. Plus we go behind the scenes at Fieldsports Channel for a comic look at the creative process with our editor Aaron Jones. ▶ Deer heart wraps - ingredients
1 deer heart
6 tortilla wraps
Mexican rub - any or all of paprika, garlic salt, ground cumin, ground coriander, black pepper, cayenne, onion powder and a pinch of salt
Sweetcorn salsa - sweetcorn plus any or all of sweet pepper diced, diced chilli, spring onion, coriander and lime juice
Vinegar slaw - any or all of cabbage, red onion, salt, pepper and cider vinegar
Sour cream
Hot sauce

New Zealand hunting and fishing is really great. Next time you get to explore New Zealand, please mention the dropping of 1080 poison and how stupid it is.
Ecouraging more hunting can help keep the numbers of animals down while putting the animals to use.
