      cerenthekoala we usually eat it with plain rice. If you love more heat, eat it with sambal (sort of chilli dip/gravy). Just a little info, for super authentic malay cuisine, we eat rice with 3 components; dish (lauk), veggies (ulam), and sambal.

    You said it well... Masak Lemak Telur !!!
    I'm Malaysian of Indian desent.
    In Malaysia although either chicken or ducks egg can be used in this dish; the egg of choice for "masak lemak" is ducks egg.
    For those who are not fond of runny eggs; they can opt for hard boiled eggs or fried eggs added into the sauce. If hard boiled or fried egges are used; we will opt for chicken eggs.

      I know, so disappointing!! she could have added two more for the camera man, and then another two or three for the other helpers!! that's so selfish of her... cooking a family dish and making it look so "stingy"!!! In India, all dishes are made to be shared!!!! or in Malysia too, i'm sure!!! we love sharing our food, coz sharing is caring!!!

    I am Malaysian. This recipe of "Masak Lemak Telur" can be found almost everywhere here in Malaysia. " Lemak " means creamy due to the creamy taste of the coconut milk. Here, we added fish, beef, prawns, or even lobster / crab. the taste ? you will dancing up and down once you try it. and yes, we eat this with plain white rice. Welcome to Malaysia !

    although i am not a professional cook....but i think if you had allowed the ginger garlic onion paste to sauté for a few minutes, it would have made that curry more yummy than it was....

      She said she freezes the rest. She was making some just for herself as a late night snack, that’s why she only did the one egg. Her shows often have a snack or something that she makes just for herself. If you see the whole show, it’s more integrated and understandable. Many of the shows are like a day in the life of Nigella and often begin with a light meal for one or end with a snack.

      just sayin malay words is easy, u people have the easiest phonetic catalog of any language i've ever seen. the only danger is in overpronunciation - the anglos tend to do that, making words like raj sound much more french than they really are

      For masak lemak gravy, thinly sliced tumeric leaves are usually added as a finishing touch. It gives a wonderful appetizing aroma.

    Hi Nigella ... Really love when you're doing our country dishes ... Here in Malaysia , you just cant go wrong with this 'masak lemak' ... There is a tonne varieties for this dish ... We use this dish with different kind pf protein u named it either beef,chicken, prawn, crab, cuttlefish , and can also be done with varieties of vegetable or you can just combine the protein and vegetables .. Its a very flexible dish .. Oh and by the way, you can heighten its taste by adding turmeric leave if u happen to have it ... I hope that u can cover many more recipe from Malaysia and to name a few like masak asam pedas, different version of laksa (penang, terengganu,sarawak), masak merah, gulai, opor and the varieties of dishes from diffrent region is also limitless ... Lot of Love to you Nigella from Malaysia

    Such a simple but versatile sauce. You can put any kind of meat, vegetable or a tub of tofu in it and it would be delicious. I like Nigella's advice that, however hot you think you'd like your food, don't eat the finger chilies; but if you do by mistake, there's always the local fire brigade to help you out.

    I am sure no taste was there in this egg curry as she did not cook it properly. Raw flavour of garlic, ginger and onion will be there. Wrong way cooking.

    You could easily substitute the egg with potatoes, cauliflower, paneer, mushrooms, tofu if you are vegan, and fish or prawns or some rotisserie chicken would be great too.
