Delicious looking masak lemak telur! This, dished it with a cup of white rice, a fillet of turmeric-marinated fried mackerel and a salad of cashew shoots, perfection! Love from Malaysia!
cerenthekoala we usually eat it with plain rice. If you love more heat, eat it with sambal (sort of chilli dip/gravy). Just a little info, for super authentic malay cuisine, we eat rice with 3 components; dish (lauk), veggies (ulam), and sambal.
You said it well... Masak Lemak Telur !!! I'm Malaysian of Indian desent. In Malaysia although either chicken or ducks egg can be used in this dish; the egg of choice for "masak lemak" is ducks egg. For those who are not fond of runny eggs; they can opt for hard boiled eggs or fried eggs added into the sauce. If hard boiled or fried egges are used; we will opt for chicken eggs. Thank you for sharing Nigella
I think the parts that i like the most in her videos is her kitchen, brightness, colours and i love when she cook at night or do snacks recipes. So relaxing and cozy.
I am Malaysian. This recipe of "Masak Lemak Telur" can be found almost everywhere here in Malaysia. " Lemak " means creamy due to the creamy taste of the coconut milk. Here, we added fish, beef, prawns, or even lobster / crab. the taste ? you will dancing up and down once you try it. and yes, we eat this with plain white rice. Welcome to Malaysia !
Being an India I always felt that South Asian dishes can never go wrong. The perfect spiceness, hotness and so tempting . My mouth is already watering though I have never tasted this, gonna treat myself this dish soon.😍
Hi Nigella ... Really love when you're doing our country dishes ... Here in Malaysia , you just cant go wrong with this 'masak lemak' ... There is a tonne varieties for this dish ... We use this dish with different kind pf protein u named it either beef, chicken, prawn, crab, cuttlefish , and can also be done with varieties of vegetable or you can just combine the protein and vegetables .. Its a very flexible dish .. Oh and by the way, you can heighten its taste by adding turmeric leave if u happen to have it ... I hope that u can cover many more recipe from Malaysia and to name a few like masak asam pedas, different version of laksa (penang, terengganu, sarawak), masak merah, gulai, opor and the varieties of dishes from diffrent region is also limitless ... Lot of Love to you Nigella from Malaysia
I know, so disappointing!! she could have added two more for the camera man, and then another two or three for the other helpers!! that's so selfish of her... cooking a family dish and making it look so "stingy"!!! In India, all dishes are made to be shared!!!! or in Malysia too, i'm sure!!! we love sharing our food, coz sharing is caring!!!
Loved the way she pronounced Masak Lemak Telur🤣🤣 Much loves from Malaysia 🇲🇾 when she made that spice paste i knew instantly knew that it was a Southeast Asia inspired dish 😍😍😍
Yes I think nicer! Par boil or just until you can peel the eggs then drop them in. Can't say I liked the look of the yolk sitting there all exposed like a dead yak's eye ball....unique anyway
Love ya Nigella! U never put on a posh attitude! U act like a regular beautiful person. Ur kids are so cute...I enjoy 😊 being a parent of four children and now 5 grandchildren. I cook for them all. I cook a lot for them and bake all our own bread. I love to bake, Brioche, Sour Dough, Wheat, Rey, etc. ...I love to bake cookies and cakes. I also bake my late Scottish grandmas and mother’s Plum pudding and short bread cookies. Have not tried much curry cooking.
This women is a culinary goddess!! Would love to see her try some Indian recipes!! Not those that have been deconstructed..bt some authentic ones like smoked hilsa in a mustard gravy
yes we have masak lemak telur here in malaysia. we rather like it in a lighter color shade when it come to the dish itself. but your is very fine aswell. and look appetizing too.
Green curry or in Malay we call it masak lemak telur.... Green curry with egg.. We can put some curry leaves to get better taste. 😊 Love to watch your videos.. 👍👍👍
Basically you can use the same paste and substitute the eggs with lightly seared chicken, fresh fish or smoked beef. In certain part of Malaysia, they would usually sweat the paste without oil first, then goes in the diluted coconut milk and a few minutes before you turn off the fire, the thick coconut milk. The coconut milk should not split. A pure Masak Lemak where it originally from doesn't use any shallots or ginger but I guess that in times it was modified to suit taste in other part of states in Malaysia. Instead of using tamarind paste, you can also use tamarind slice. The lemongrass is usually pounded a bit to release its juices. A bit of red chillies give a bit of colour and thinly sliced turmeric leaf as garnishing gives an aromatic smell.
Use fresh turmeric whenever you can. There was a scandal some years ago where powdered turmeric imported from India and Bangladesh was intentionally contaminated with lead (to make it more yellow and add bulk) and had to be recalled. Now I only use fresh. 1 teaspoon turmeric powder = 1 tablespoon grated fresh turmeric. If you don't peel them immediately they can be kept intact at room temp for a few weeks but if you don't use turmeric that often it keeps really well in the freezer.
She said she freezes the rest. She was making some just for herself as a late night snack, that’s why she only did the one egg. Her shows often have a snack or something that she makes just for herself. If you see the whole show, it’s more integrated and understandable. Many of the shows are like a day in the life of Nigella and often begin with a light meal for one or end with a snack.
Egg curry is a household dish from Bengal. But this Malaysian dish is different. Amazed to see it done by such a legendary cook. Many use store bought turmeric, but using fresh turmeric is always healthy, both for its freshness and also it's also a lot more healthy. In Bengal mostly Mustard oil is used and the ingredients may be sauted directly on oil without blending them. This adds a rustic flavour to it. Coconut milk can also be replaced with Greek yogurt. P.S.- We always eat green chilli ❤️ from India
Masak lemak telur. Malaysian dishes. You can also use salted pickled duck egg. Hard boil it. Peel it and then put in the gravy. 😊 i enjoy watching your cooking.
Such a simple but versatile sauce. You can put any kind of meat, vegetable or a tub of tofu in it and it would be delicious. I like Nigella's advice that, however hot you think you'd like your food, don't eat the finger chilies; but if you do by mistake, there's always the local fire brigade to help you out.
although i am not a professional cook....but i think if you had allowed the ginger garlic onion paste to sauté for a few minutes, it would have made that curry more yummy than it was....

This and Sambal Udang... yummyyy
IzzuanNymQ Affendi do u guys put one egg in masak lemak telur
Ahhh this is great to know. I really wanna make this the authentic way - so you serve it with rice? Is it special rice?
cerenthekoala we usually eat it with plain rice. If you love more heat, eat it with sambal (sort of chilli dip/gravy). Just a little info, for super authentic malay cuisine, we eat rice with 3 components; dish (lauk), veggies (ulam), and sambal.
Ayesha Khan not really. Depends on how many people you wanna feed. For a person, one or two is enough.
So happy to see a Malaysian recipe done by a legendary cook! Yes Miss Lawson you pronounced it beautifully!

I love how she tastes the food and, with food in hand, she's like "kthnxbyeee"
I knew its a Malaysian inspired dish by that paste alone! So glad to see the recipe spread elsewhere
I do think you and your skills in the kitchen are marvelous- and you, ma'am, are absolutely glamorous.
Lol I absolutely love the walking away like a Boss eating it! "Glorious!" She's so cheeky, I love it!
she's simply gorgeous!
Love her show! Everything she makes looks so good. Especially her desserts!
What I love about her is that she’s always smiling.
that's why she's so pretty
You can subtitute the eggs with smoked meat or fish as well.
Oh yea fish would be excellent.
Could/would you add browned or seared meat into it and let it cook the rest of the way in the curry?
This actually reminds me of Tom Young (?) the one with shrimp instead of the Egg..
Being an India I always felt that South Asian dishes can never go wrong. The perfect spiceness, hotness and so tempting .

if i may ask.. is it fine if we dont add the lemongrass.. cos my place doesnt have them and I really wanted to try this dish
But she just put in one in egg in all of that curry...
avidreader 231 ..... just one miserable egg in a pan full of curry.
I was thinking the same.
Perhaps she had only egg in the refrigerator 😂
Or maybe she will freeze the rest ( see 4:17)

For masak lemak gravy, thinly sliced tumeric leaves are usually added as a finishing touch. It gives a wonderful appetizing aroma.
