    Before buying a freeze dryer, perhaps research to find out more about the downside of the machine; some people have problems with their machine and it's big and heavy and hard to return!
    When trying to decide what to freeze dry you can start by asking why.
    Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
    I'm freeze drying because:
    Just to freeze dry leftovers?
    You want to make your own food for camping/backpacking?
    For if/when the SHTF?
    For a short term emergency?
    You have your own garden and want to freeze dry the food?
    You love Costco but don't have a family of 6?
    You are good at finding the food sales but only have 1 freezer?
    When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
    If I knew then what I know now, I would have freeze dried things in a different order. Or maybe not, because I started freeze drying because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
    Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
    We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests. Freeze dried food is also great for prepping or just for camping and snacking!

    to me the most important take away is that the carrots and other veg actually improve in texture after more time to rehydrate. I am certain that many people think it will only get worse not better.

      Exactly! Sliced ham is really good in just a few second, but some things take quite a few minutes or hours. Pickles got better and better for about 3 days in the fridge.

    Thank you for this great demo! More of demos on rehydrating different types of foods would be awesome. I saw a post on one of the FB pages where the gal used tamale/corn husks and steam to rehydrate pies can casserole type foods. I have yet to try. I'm still building up my food stores ;)

      I do already have at least 66 videos that are rehydrating or have rehydrating as part of it. (probably more, but I didn't think to identify them as having rehydrating in them and now with 400 videos it's hard to go back and check them)
      Sometimes it hard to get a rehydrate video because I only like to rehydrate the food if: 1) I'm hungry for that food and we don't have any of it except the freeze dried.
      or 2) We are thinking about freeze drying a bunch more and want to find out how the older bags of it are doing. (You could also count "laziness" and "no one has asked to see it" as 3rd and/or 4th reasons)
      My #1 child told me not to bother going back to the old ones and checking or re-editing, just make new better ones. (and added that the old ones aren't really that good because I didn't do a good job of explaining what was being shown. True and correct, if a bit harsh!🤣)

      @@SchoolReports Kids, kids LOL - we'll I just love your videos and will take what I get LOL! I have seen some of your others with regard to rehydrating and now looking on the right side of this page, there are numerous videos with "Rehydrating" in the title of the videos. Good ole Googoo predicting what I'm looking for. I'll purposefully select some videos on car repairs and send it for a loop Ha! Looking forward to your next!

      Thanks! I am trying to remember to make sure the whole shirt shows in the video. However, sometimes I make sure it doesn't show because I'm still in my pj's. 😇
      I'll also have to try to remember to mention which shirts would be unavailable. (Except maybe in the vintage listings on eBay)
      I have more printed shirts than I could wear out in a life time. (I'd never worn a printed t-shirt before I was 23, and after a life-changing event) A bunch of the shirts hang on the walls of the stairway going to the basement freeze dryer area; I'll have to share pictures of the shirt walls and my method of hanging shirts sometime. 🤣

    I love the visual aspect of this experiment. Excellent information that we are learning from you! My question is…what are your thoughts about cooking with the dried veggie bits (like you have here). For example, what about cooking the insides for pot pie using the freeze dried mixed veggies? I would think it would turn out perfectly fine. Thanks again! ~Sharon from Florida

      That would be a good use for the mixed vegetables, I hadn't thought of that. Pot pie filling is good!

      We love ours as the pantry and we've used ours for camping in the past. Right now I'm working on getting our van fixed up to use for traveling/camping. We used to bring our freeze dried food camping when we had a travel trailer. Works great. When I was much younger I used to bring Mountain House freeze dried food on back packing trips, and being able to make and bring your own is better!

    Hello Dan , I've been trying to find the video where you mentioned the Nitrogen gas , My husband works away so had to wait till i could remember 😉 to ask him where and what , anyway he told me he found it via youtube when he was looking for information and a video from an american school came up teaching them how it works , long story short Mylar bags of chips were put into a large bucket and the gas then pumped into the bucket lid put on and after a few minutes the bags would then get heat sealed , what we did here in Australia is looked for FOOD GRADE gas because there's also for plastic so make sure you get the right gas , and got the correct regulator he got a 2 foot long nozzel , what we did was seal most of the mylar bag and leave enough gap to get the nozzel in and push to the bottom pump ya gas in then finish sealing , we just bought our bottle of gas from a local place , i forgot what type of shop it was but they did sell different types of gas , my husband email me a link to a machine to show you but no way did we pay that much to put the gear together ourselves , ill try to get better info if you need it , hope that helps .

      Thanks so much for this. I guess I've been thinking it was more complicated than it is. I found this video ua-cam.com/video/yCj2JSX2pUY/v-deo.html and then checked our local welding supply store's web site and found they probably have everything I would need. They even have 6 grades of nitrogen! (including food grade and medical grade) Who even knew there were 6 grades (or more?) of nitrogen?

      @@SchoolReports Your very welcome and YES! thats the same set up we have :) we got it maybe 7-8 years ago so we must have know the world was turning to crap way back then , mind you not many Aussies were doing what we did back then so we were pretty much trying to teach ourselves , My husband really wants to can stuff ( in tin cans ) so some how he managed to get a hold of some Amish lady via email then got a canner from America , I have a food licence but i will not do food in tin cans unless its dry , there's so much out there to learn but we of course had to legally make sure everything is spot on :) Thanks for the youtube

      There is such a big range of time for the best rehydration. Sliced ham is really good in just a few second even using cold water, but some things take quite a few minutes or hours. Pickles got better and better for about 3 days in the fridge.
      When we plan ahead and start rehydrating the night before, (or early in the morning for eating in the evening) we just go with cold water. We thought that the color stayed better with vegetables when we did. Here's an example of asparagus.     How come you don’t insert a moisture meter to make sure they stayed bone dry (no moisture got into the packaging)

      Good question!
      Because 1, I don't have one designed to check the water activity (aw) levels in food, and decent ones start in the 3 to 9 thousand dollars range, ( www.weberscientific.com/water-activity-meters-novasina ) and 2, that's why we weigh each bag before we put them on the shelf; so we can track the bag weights to know if moisture gets in.
      I've read comments from multiple people saying they use wood moisture meters, an infrared thermometer, or thermal imaging cameras for their food. In my opinion, wood moisture meters are worse than a waste of money when used as a moisture meter for freeze drying food; they would give a false sense of security. They are not designed for this purpose and will not do the job. Maybe I'm a bit neurotic when it comes to water activity levels in the food for storage, but I don't think so.
