My strategy is I V all the way at one bar each using b5 subs.

This is easy and it sounds quite colorful. Justification for bar one and two, D7 is III7 in B major, Gmaj7 is a relative major of II of b5 sub in Eb major.
There's a lot of cool colors that come out of that.

Good stuff! Very clear and well explained. I recognize your "strategies" from my own (perpetual 😅) study of Giant steps. Another "trick" I've found is to play B penta - C penta - D penta - Eb penta - F penta. That also gives you a quick and schematic pattern that though moves in the half tone / whole tone sequence, and gives more of an angular sound.

could you post videos on where to start with jazz, if you come from a more rock, and blues standpoint. id be interested to see what insight you have and some advice
I'll try to do that at some point. Off the top of my head, you could try some modal tunes like So What or Little Sunflower. They don't change keys too quickly and so it's easier to manage the improv. Also jazz blues tunes like Blue Monk or Straight No Chaser have just a few more chords than a rock blues would.
