    Apple and pastry cream brioche cake recipe.
    🛒 Ingredients (28 cm / 9.8 in diameter pan) (8 servings):
    Brioche base:
    🔸 300 g plain wheat flour (2 cups)
    🔹 2 eggs L
    🔸 60 ml milk (¼ cup)
    🔹 50 g sugar (¼ cup)
    🔸 1 sachet vanilla sugar (8 g / 2 tsp) (optional)
    🔹 100 g unsalted butter (7 tbsp)
    🔸 4 g dry baker's yeast (or 12 g / 0.4 oz fresh yeast) (1 tsp)
    🔹 5 g salt (1 tsp)
    Pastry cream:
    🔸 250 ml milk (1 cup)
    🔹 3 yolks (Large)
    🔸 50 g sugar (¼ cup)
    🔹 1 dash of vanilla essence
    🔸 30 g cornstarch (¼ cup / 1.1 oz)
    🔸 1 apple
    🔹 Marmalade lightened with a little water to brush the apple (I used a pumpkin one, but you may use peach no problem).
    🔸 1 egg + 2 tablespoons of milk (to brush the dough)
    🍳 Recipe for Brioche cake filled with pastry cream and apple, step by step:
    1️⃣ Prepare the dough. Mix the yeast with the warm milk. Let it rest for 10 minutes.
    2️⃣ Put the flour in a large bowl. Make a hole in the center and pour the sugar and vanilla sugar. Pour over the milk with the yeast and the eggs at room temperature. Place the salt around the edge, so that it is not in contact with the yeast.
    3️⃣ With the help of the dough hook or a spoon, mix all the ingredients from the center outwards until everything is combined. Gradually add the diced butter at room temperature. When it is completely combined, continue kneading for 5 minutes. Place it in a clean bowl, cover it so it does not dry out and let it rest for 2 hours.
    4️⃣ Meanwhile, prepare the pastry cream. In a small saucepan place all the ingredients listed above. Mix until well blended. Heat over low heat and cook, stirring constantly, until thickened. Transfer the cream to a bowl and cover it with plastic wrap, keeping it in direct contact with the surface to prevent a crust from forming. Let cool to room temperature and then store in the refrigerator until ready to use.
    5️⃣ Uncover the dough, degas it with your fist and place it on the work surface with a pinch of flour. Knead for a couple of minutes. Roll it out with a rolling pin until it is a little larger than the diameter of the mold. Transfer it to the mold. Spread a little of the dough around the edges and close them inwards. Cover the dough and let it rest for 30 minutes.
    6️⃣ Whip the pastry cream to restore its creamy texture. Pour and spread it in the center of the dough. Peel and thinly slice the apple. Place them on top of each other, covering the cream and forming two circles. Beat one egg and two tablespoons of milk. Brush the edge of the cake with this mixture.
    7️⃣ Bake at 180 ºC (350 ºF) for 30 minutes. Let cool 10 minutes and unmold. Brush the surface of the apple with the jam lightened with a little water, so it will have a shine and a very nice golden color.

    Ola, por favor podias hacer alguna receta con kiwis porque tengo muchisimos. Yo hago mermelada y algun bizcocho, queria algo diferente. Muchas gracias. Un abrazo
