Recap:
Marilyn's Improved Lemon Rhubarb Cake. Original recipe from the "Ideals Family Cookbook", was just way to sweet and gooey. By doubling the amount of rhubarb and lessening the sugar by a third, it is just right. With this improved version, you can taste the rhubarb and it is still plenty sweet.
Recipe, Marilyn's improved version;
Lemon Rhubarb Cake, Improved;
Prepare 1 box lemon cake mix
Put into 9 x13" pan
Sprinkle with 4 cups finely chopped rhubarb ( original was 2cups)
Sprinkle with 1 cup sugar ( original was 1.5 cups)
Sprinkle 1 - 3oz box strawberry jello
Bake 50 - 60 minutes @ 350° ( 325° for glass pan)
Toothpick should come out clean when done.

Interesting that you left a comment the day you did. I had frozen some rhubarb this past summer to see if that would work in this recipe. So yesterday was the day I tried it out, Worked great.

I defrosted the rhubarb first, and used it while still cold. I did everything else the same as in your recipe and used a Betty Crocker lemon cake mix."
I had some frozen rhubarb too... I was searching for ways to use it when I found your video. I made a cake this morning... dessert tonight.. hopefully it turns out nicely like yours did! I used a butter pecan cake mix. This will either be really good or really bad!! I really enjoy your videos, keep them coming.
