Thanks for this. I live in England, and crumpets are plentiful to buy, but non-gluten versions are so much more expensive. I'm actually using this recipe to make pizza bases (another relatively expensive item). Crumpets have such a great texture and taste, and go really well with the traditional pizza toppings.
Yes, a pack of four gluten-free crumpets is about $7 to $8! Here in Australia. Which is outrageous! Once, two brands were available, Liberate, made in New Zealand, and my favourite, Genius Brand, made in Britain, which was so cakey and light. I can no longer find my favourite Genius Crumpets in our shops anymore. So that is sad. The Liberate crumpets, made in NZ, taste watery and bland compared to Genius Gluten-free Crumpets. The Brits know how to make a lovely crumpet. Like you, I, too, grew up eating crumpets. Usually, in the winter, it was toasted with a bit of butter and honey for breakfast or afternoon tea. You can still buy those wheat flour crumpets for around $3 in our shops, and you get six crumpets rather than 4 for less than half the price! Sadly, I can no longer consume gluten as I was recently diagnosed with celiac disease. I now have several other sudden-onset autoimmune diseases after my second Pzifer vaccine, and my Doctor confirmed that the Pzifer vaccine was the trigger. So now I make versions of my childhood favourites, like pikelets. Tiny little pancakes. Patty cakes, or wee cakes in patty pans, are a smaller version of what Americans call muffins. I also use natural sugar alternatives, as sugar causes inflammation in my body and triggers my autoimmune diseases. As a child, we did not have many treats, so I always made my own treats or experimented with ingredients to make things taste better. Or invent treats and unique birthday cakes for my friends and family. Thank you so much for your crumpet recipe, I may tweak it a little for my personal taste. I like to top my crumpets with your lovely Canadian Maple Syrup, coconut yoghurt or lactose-free Greek yoghurt, lemon juice and fresh sliced strawberries. So yummy 💕
Just made these, I got 8 in total! I used the freee-foods (common brand in the UK) gluten free white bread flour, which has slightly different ingredients than the Frankie's one you use, but still worked well. They are delicious, though I struggled to get holes in most of mine, which I think was to do with the heat, medium heat on the small hob ring worked well for me in the end. I also poked some holes in with a skewer just before I flipped them which worked great. All round a great recipe and your video was really easy to follow, thanks!
Hi! Thanks SO much for this video. In the past, I've tried making them a few times without success. But your video solved the problem; my pan was not the right temperature! When I saw that you used a laser thermometer, I literally dashed to the garage and found mine. I followed your guidance exactly (189.2f!) and now I have 7 perfect crumpets. I'm in England so crumpets are 'common' here but I've started to do what some Americans do and have tried them with eggs - poached, scrambled, fried etc. Just proves that the US/UK bond is still strong!! Thanks again.
If you are going to do an exact copy (down to measurements, and order of ingredients) of John Kirkwood's video/recipe, it would be cool to at least credit him.

Yummy, do you think this could work with buckwheat flour instead?
It's possible, however when making things glutenfree, I like to have a blend of glutenfree flours to give me the best result.

You lost me at sugar. Crumpets are NOT sweet.
The sugar is the food for the yeast. All yeast requires some form of food to activate it and get it to grow. Thanks for commenting.
They do not turn out sweet at all. As the chef says, the yeast processes it to create the CO2
