Any chance you can do a video explaining how you maintain the grill at the temp you want? How much charcoal to begin with, how you have the vents set etc? Thanks,
Really for that low temp on the kettle it’s about balancing the amount of fuel with your conditions. There’s no one method or setting that will work for everyone. But I also don’t worry too much if my temp shoots up a bit at times.
You know Ry, you shouldn't have explained about what precautions you took when double-bagging the meat. It would have been interesting to see how many nattering nits would have come out of the wood work. Having said that, it looked more than just good. When I try it, however, I believe I will use crushed cashews and maybe sneak in a few rolled up pieces of thick cut bacon.

Hello sir, I just purchased a Camp Chef Woodwind. Do you line the drip tray with foil even though it has all the little vents?
I usually cover it with foil to make for easier cleanup 😊
