Grilled Pepper Honey Chicken With Chickaronnes

  • I’m not just making chicken today. I’m grilling up Pepper Honey Chicken on the Weber Kettle and using the discarded chicken skins to make some crispy Chickaronnes (the clucking cousin of Chicharonnes). When both are done, it’s time to combine them with a few ingredients to make some terrific Chicken Salad Sandwiches.
    Pepper Honey Marinade Ingredients
    5 TBSP Honey
    3 TBSP Pepper Jelly
    2 TBSP Soy Sauce
    1 TBSP Stone Ground Mustard
    ½ tsp Salt
    Honey Mustard Spread Ingredients
    2 TBSP Honey
    1 TBSP Stone Ground Mustard
    Chicken Salad Ingredients
    5 cups Cut Up Chicken
    ½ cup Mayonnaise
    ⅔ cup Chopped Celery
    ½ cup Chopped Scallions
    Any other ingredients you choose plus Salt and Pepper to taste.

    WOW.....I love chicken salad and I like a little spice also... You are getting robbed on this one my friend. Since my Dr. wants some weight off this is a must. Great cook Ry. Can't wait to try this. At the moment I I have 2 3# meatloaf and a small chub of baloney on the Joe.

    Is it worth getting a vortex? Will you not get the same result just using a coal basket?

      The vortex puts out quite a bit more heat than the baskets. But the baskets can work.

    Showing some competition skills there by scraping the the back of the skins. 😁 My favorite part of chicken is fried skin or bbq skin. Kind like the best part of a ribeye is the fat. Lol! Looks delicious bro. Fried skin definitely kicks it a few notches.
