  • Chicken Thighs are my favorite piece of the bird to grill or smoke. In this video I give several thighs a combination of rubs, smoke them on the Weber Kettle with some peach wood, and finish them off with a delicious Spicy Peach Glaze.

    Just a touch of baking powder in your rub will pull the moisture out of the skin as well. I did these. They were amazing. Great job. Thanks.

    Very good recipe.
    Puréed some pineapple to replace the preserves and it worked great, with less sugar. Have to get the temp to near 400 to get the skin not chewy.

    I smoked the spicy chicken last night, it was fantastic. But... I didn't add the pepper flakes to the glaze for fear it would be too hot for my family. I was wrong. Ry, you said in the video that the glaze would mellow, I should have trusted you. So to the fans that follow your great post, add the pepper flakes, don't be afraid. Thank you for your passion to smoke.

    Your right, Very Nice looking Bird parts there. Cooper must of thought he had better do his part extra good so he can stay in the rotation... IF there are any left overs I bet that spice n glaze mix would make so delish Chicken Salad.

    Awesome video as always! I learned a tip a while back about getting the skin on chicken to get crispy and I was told to purchase a hand held round meat tenderizer and use it to puncture the skin of the chicken putting in as many holes as possible, then follow the same steps that you did and the final results will be crispy chicken skin easy to bite through.

    You may not have a fro, but you both do wonders with brushes! I double doggy dare you to get a fro! You would go viral! Use your brush and paint away a chop or a rib or a fish! Cant wait!

    Roflol, it's SO true, you ARE the Bob Ross of cooking. And relaxing AND educational snd you make amazing food. I think it's a compliment as well. Bob Ross rules!
    I do have one question, the Smoked Paprika, ix that a spicy or sweet smoked Paprika I always use the sweet version. Soooo delicious

      I prefer the sweet. I think it’s often sold as a Spanish paprika 👍

      @@CookingWithRy yeah true, the tiny red tin. I make a burgersauce with yoghurtmayo and a nice amount of sweet smoked paprika, soooo delicious. I made my homemade burger with that sauce for a friend recently, and she attacked the burger, she also loved the sauce😃

    Grill Mates Montreal is a great rub. I add celery salt. I also do a honey glaze with acv, Sweet Baby Ray's, and chili garlic sauce. Not much smoke though

    These look very tasty Ry. Just ordered a bottle of that seasoning, it says there is not much salt in it and I have to watch my salt so this should be good. Thanks. When I was a kid, we used to fight over the white meat but as I grew older, I prefer the legs and thighs to the white meat. Glad to see you using the Weber off and on, I have one and prefer to use it even for smoking.

    Awesome cook. I also love thighs. In regards to prepping them, I learned to break the joint where the two major bones connect. eg, In one hand, line the part that has all of the brown junk along the meaty portion of your thumb to brace it, and in the other hand, Take the side with the longest bone and use it to pry and separate the joint out of cartilage. I hope that makes sense? Ps. The Bob Ross comment is a spot-on description of your cooking style! lol

      I worked in a chicken joint in high school. Breaking the joint like you said was SOP. Then you run your thumb down the channel to remove the nasty kidney remnants. Then all the pieces went into a wash of lemon juice, apple cider vinegar and water before breading and frying. I still do it that way today, 40 years later.

    Looks Fabulous, i will try it with chicken breast though as my wife cant stand leg meat. But great cook Ray, i love all your vids. Trying to get the It’s Incredible Seasoning rub over here in the UK, hope they will ship it over to us. We don't get a greats selection of rubs ect as you guys in the states get. but fingers crossed :-)

    I've got a question, how come you always wait for the smoking wood to catch? I thought that you didn't want the wood to burn (i.e. with a flame) and it should just smoulder instead?
