Good Morning Neighbour over the River, Pat - Teacher, just wondering if your delicious looking cream puffs can be made ahead of time as I never seem to get the time to do everything….how many days ahead can these be made? And how to conserve them….also are they crispy and for how long will they stay crispy if made ahead? They really do look good! 😊
The way to make them ahead is to refrigerate the dough, and that can be done up to 3-4 days ahead of time. They are absolutely best if baked within the day of serving!
Your baking time so long compared to most videos I have watched. What is your reason? Your technique( recipe) is no differengt so that doesn't explain it.

Is it all purpose, flour or self rising flour?
All purpose (plain) make sure pastry is cool before adding the eggs.
Hey Vickie, we use all purpose flour.
Does the continuous beating of eggs help to make then airy and rise ??
It definitely makes a noticeable difference!
I use my kitchenaid.
