French here, i think u can use the "fromage en grain " used for poutine . Its a youg chedar i think so its close to our "tomme fraîche " used in aligot ,truffade ... U can also use a young cantal if u can find it
one of my faves! its crazy how silky and smooth you can get the potatoes. Why that extra step at the 2:32 mark, what is that sieve? how come you can't just go through the ricer again? also, I see that jersey underneath the apron haha
