The Best Fudgy Chocolate Brownie Recipe
Ingredients:
140 grams caster sugar
140 grams milk
205 grams dark chocolate, room temperature and chopped finely
75 grams salted butter, melted
140 grams all purpose flour
40 grams cocoa powder
1 teaspoon instant coffee powder
zest of 1 orange, optional
I have used a 9 x 9 inch square baking tin. I've also greased the tin and lined it with parchment paper.
Preheat oven to 160 C. Bake at 160 C for 22 - 24 minutes or until a knife or toothpick inserted in the centre emerges clean with just a few moist crumbs. There shouldn't be any wet batter left.
Let the brownies cool in the pan for 40 - 50 minutes, then remove from the baking tin and let it cool completely, preferably overnight.

Hi Bansi, ensure that the milk is boiling hot when you add to the sugar, this will melt the sugar instantly. Also whisk the chocolate, butter, hot milk sugar mix really well so air bubbles form. Finally, while baking ensure you're not overbaking the brownies, they are done when you stick a knife in the centre and it comes out with a few moist crumbs (not dry and no wet batter). Hope this helps.

Hi Grishma, I've used Morde compound. You can also use Amul Dark chocolate or Bournville. I tend to use one of these 3 depending on what is available locally!

Hi Grishma, I haven't tried replacing the milk with water, so I am not too sure. Maybe you can try replacing it with coconut milk or almond milk?

Absolutely! Make sure you coat them in about 1 teaspoon of all purpose flour first so they spread evenly in the batter and don't sink to the bottom when baking! x

You can use oil instead (same quantity)

Hi Moulishree! You can follow the same recipe, but the baking time would increase by another 10 minutes or so. You can bake this for about 30 - 35 minutes and check for doneness and adjust accordingly! I hope this helps! 🥰

Didn't get the crackly top what could be the reason?
Hi Manpreet, the milk has to be boiling hot so it dissolves the caster sugar completely. While testing the recipe, I noticed that when the sugar granules were still present (even tiny bits) in the batter, they didn't give the crackly crust. I hope this helps.
