How to make Pollo Guisado by Chef Kelvin Fernandez

  • This is my Version of Pollo Guisado its not my grandmothers, its not my mothers, this is my version. I think its really really really good. I hope you enjoy this recipe and continue to cook with me.
    Yields 4
    1 whole chicken broken down to 10 pieces
    2 breast cut in too two pieces, 2 wings, 2 legs, 2 thighs
    2 tablespoons of oil
    2 teaspoons of granulated sugar
    1 tablespoon ground oregano
    1 teaspoon of ground coriander
    1 teaspoon of ground cumin
    1 tablespoon of ground garlic or garlic powder
    1 tablespoon of smoked paprika or regular paprika
    2 tablespoon of Kosher Salt
    juice of 1 lime
    1 red onion sliced
    5 cloves of garlic thin sliced
    1 red pepper sliced no seeds
    1/4 bunch of culantro
    1/4 bunch of cilantro
    3 tablespoons of Sofrito
    8 oz can of tomato sauce
    Sofrito
    1 medium yellow onion
    3 cloves of garlic
    1 long green pepper diced
    1 red pepper diced
    2 table spoons evoo
    1 28 oz can of crushed tomatoes
    1 teaspoon of paprika
    1 teaspoon of smoked paprika
    1/4 bunch of cilantro
    1/4 bunch of culantro
    cook for 25 minutes and puree and reserve you can even freeze your sofrito
    Serve your Pollo Guisado with White Rice or mashed potatoes
    i served mine with avocado, maduros and white rice

    I just made this for dinner tonight! I’m Dominican, and I grew up eating this, because my parents would always make it. Now I’m married and cook 👩‍🍳 all the time. Well, when I saw this video, I knew I had to make it. It was amazing!!! Tasted just like the kind I ate growing up. I used 2 sazon packets instead of making my own seasoning blend like you recommended we could substitute. Thanks again! Looking forward to having leftovers tomorrow

    Yo, first saw you with the 3 different types of tacos UA-cam video. The way you made them handmade tortillas!!, I knew you was legit brotha! I’ve been subscribed since and watch your videos, they’re great cuz I can tell you do what you love, and that’s what it’s all about!
    May I request a video on Arroz con gandules? maybe a Colombian Mondongo? Or an Argentinian empanada? Please...? Lol

    You missed the potatoes and the carrots that we originally put in the stew and we mash in the rice, but it looks AWESOME! I personally add 1/4 tsp of corn starch. It thickens the sauce but the butter idea is perfect. I will make this tomorrow based on yours. Thanks for the amazing recipe.

    I'm not a fan of Coriander or Cumin 🤦 but from the looks of it with everything else added it shouldn't be to over powering right?? Either way Chef it looks amazing. I wish I was your neighbor lol!! Thanks for sharing and that sofrito wow so different can't wait to make that one day. And also like your Saxon cause I try to stay away from the packets and do more natural ingredients. I been cooking alot with tumeric. Anyways thanks again. Stay safe GB

      absolutely just adjust seasoning after i feel sometimes the pressure cooker takes some flavor away

      웃 simple 1 part rice 2 parts liquid bring to a boil add rice cover and low heat for 20 min then turn off open the lid after 30 min

      Es mejor que no la entiendas esta receta no es representante pollo guisado puertorriqueño ni dominicano. Esto es un pollo guisado americanizado y se que las recetas traducciónales aportan un sabor authentico. Esto es un no no no no no.

    I feel like there should be honesty and a disclaimer so people are aware this is a non -traditional inspired twist version of pollo guisado because the spices used and techniques are not how Caribbean food is made. Butter to thicken the sauce was the point of no return no this is blasphemy ...recipe is not Caribbean at all.
