    To what extent profile do you most often roast coffee for espresso? City or darker one?

    So you say that as a rule of thumb, it's best to cool the coffee to 40 degrees Celsius, in under 3 minutes, while trying to keep the bed of coffee as flat as possible, at the right fast enough speed of agitation. Correct?

    If it were possible to cool in 2 or 1 minute, would that be desirable?
