An underrated city builder/colony sim is a little game called Timberborn. You control a colony of beavers in a post-apocolypse. The game allows for a lot of verticality which is something missing in a lot of city builders. A lot of the buildings have flat roofs and you can build platforms and overhangs to expand even taller. The game is still in early access and the potential for it to be a truly great game is there.
Playing as the lizards in Songs of Syx, I see what you did there AA, hehe. For the fellow computer nerds out there I can recommend Tunnet, it's about building a computer network between underground doomsday bunkers, it has a horror element to it, but if you don't want any hostile encounters and just build stuff you can turn them off in the settings menu.
Dwarf Fortress in nothing short of a miracle. ONE math teacher goes crazy, quit his job, and creates the most complex game ever made single handedly. And there is nothing out there quite like it, the worlds it generates feel alive, the dwarves/elves/humans/etc, all the creatures, they behave like living being, its hard to explain .
Dwarf Fortress and its production also really puts into perspective how blizzard, EA, etc are worthless. Million dollar enterprizes with thousands of employees make one turd after another while this one dude made a working alternative reality simulator using windows 98 and DOS.
It all came spiraling down when a dwarf got reanimated into a zombie in a pit under the main staircase that I had totally forgotten about, cutting the fortress in two as no dwarf would dare approach the stairs to access most of the base for fear of the zombie. Things spiraled from there....
You perhaps haven't played oxygen not included for a while unfortunately they massively nerfed disease , and its no longer a problem, except for very particular plant
What the heck was the Soviet style Factorio? It has the built in Achilles heel of being Soviet where everything didn't exactly make sense (mostly placement wise) but was still a popular game.
DF frustrates me due to glitchy mechanics for guards grabbing their equipment and weapons. I would love to see a DF that was better on multicore so I could play with a dual Xeon setup.

Factorio is the game where Starship Trooper bugs try to kill you for polluting their habitat. They can easily end a run if you aren't prepared.

If Dwarf Fortress is maybe a bit much for first time player, Keeper RL could be worth playing first.
