Theoretically you should ice your shaker last for two reasons, foremost is that the liquid ingredients poured over ice can splash out of the shaker and secondly the ice melts before the shaking, adding excess water to the drink. Also, a frost forms on metal shaker bottoms like that making them slippery and easier to drop.
he litterally pours all his ingredients in the small tin where there is no ice. and he clearly at 1.46 gets out the excess water from the ice in the big tin which is now fairly cooled down from standing there for 45seconds with ice in it, this is pretty common practise for alot of bartends to ice up big tin before use.

Im more wondering why he uses a mini keg to store whiskey but doesnt seem to think that the keg will effect his count pour but then isnt so confident in count pouring with campari.
Not sloppy per se but the he sacrificed class for style. Everyone has his preference. I guess this guy would do great at higher clubs and the Japanese ones are more for a high society gathering.
