    So delicate and then he forgot to clean the bottle tip before pouring. Sometimes by opening in that way pieces of glass get stuck in the bottle so I guess he had to clean it with a napkin or something
    So glad for being Portuguese, this is a beautiful technique

    I don’t know why this restaurant deserves 3 Michelin stars with basic negligence of food safety Maybe all these Michelin guide cares about is the presentation and food flavours.
    What if glass shards fell into the wine?

      This is not a 3 michellin star. This is a restaurant the wants a michellin star! You can tell by so many ways, the matre d’ carrying more than 1 glass on her hands, kitchen too noisy, guest not dressed appropriately so on and so forth

    Would NOT want to be served this way. Pieces of glass in my glass are not something I prefer. Bottles have been open the tradionnal way foir centuries. Why change a winning formula?

    Micro glass particles, strange ambiance, showboaty performance tripe, and sticking his nose in my wine and *drinking it.* I just don't get it man. I'm capable of telling you if the wine is a dud so there's no reason for you to do that other than to goof around and appear as a child.

      You are right but wrong at the same time, i worked in 3 michellin star rest, but this wine service we do it away from table so guest dont see it, so when we bring wine to table the wine must not be corked..

      as you saw in the video he lit a candle and decanted the wine with the bottle in front of the candle as to see any eventual sediments and not pour them to the guest, that is also why he stopped half way through so he could give the sediments time to set to the bottom again, not to air it.

      Yes, but when putting old wines in a carafe like that there's still a chance to kill the wine with airshock. Should have used a narrower carafe in my opinion. But hey, i'm no expert. I guess this guy is pretty solid.
      Still a really cool way to open wine i think.

      There will never be a clear best rule as to how and if decant/aerate a vintage wine. A smaller quantity in an appropriate glass aerates the same way as almost a whole bottle in a decanter/carafe. As much as we'll try to standartize the service of wine, the last word belongs to what is in the bottle. I had a bottle that was opened for days of a dry red wine and the wine was even more amazing. What we do in restaurants is more for show.

      @@frankzlappa1709 Søren Ledet is one of the premier sommeliers in the world, aspiring to become one of many few to take the fourth stage at the London Court of Sommeliers. Heard him in a famous Danish foodie podcast at friday, the guy's amazingly talented.
