  • Coconut and finger Lime Cake
    Yoghurt instead of milk in a cake just seems to make it super moist. Using flavoured yoghurt just adds another dimension. This recipe was a plain vanilla cake that has come to life using coconut and finger lime flavoured yoghurt.
    Ingredients
    2 Large eggs
    150g granulated sugar
    225g yoghurt - coconut and finger lime
    ½ cup olive oil
    1 teaspoon vanilla extract
    200g self raising flour
    Powdered sugar for dusting
    Method
    1. Preheat oven to 175c. Line a cake tin with baking paper.
    2. Combine eggs, sugar in a bowl, and whisk vigorously until pale and frothy. Whisk in yoghurt, oil, and vanilla extract.
    3. Whisk in self raising flour. Combine until no lumps.
    4. Pour into lined cake tin. Depending on the size of the tin used will change cooking times. In the video I used a 20cm square tin and it was a thin cake and took about 30min. Always use a skewer to poke and comes out clean.
    5. Allow cake to cool. Serve up dusted with sugar if desired.
