The water is just to aid coating the noodles with the chilli paste, use just sufficient water for that, and let the water evaporate. Too much water will make the noodles soggy and over cook the noodles. The noodles should have a bit of a raw flavour to it.
Suggestion, use chicken stocks or chicken powder instead of plain water. No msg version is fine. Add abit of sweet dark soya sauce to make the color more glossy. Skip the sugar
Also add little of light soy sauce instead of adding salt and chicken stock or chicken powder already salty, finally have to add bean sprout, green shallots as well. This will come up a fully favour of the Malaysia dish.
Yay, have yellow noodles, some cabbage, frozen prawns and store bought sambal around so it'll be mee goreng for dinner tomorrow. Found this video painful to watch with all that scraping of the kwali by the metal spatula. Glad you're now using differnt woks and spatulas in 2019.

Hi Christopher. We normally just use it straight from the packet. You can rinse them in a pot of rolling boiling water to give them a rinse too before the actual cooking. Hope this helps.
Hi why don't you switch to using a high pressure burner , your stove is way too slow.I guess you using that stove because most people who would attempt that recipe would have a similar stove so that's understandable. Overall great recipes..
Hi Bee Leng, we got the wok from a HDB shop -- those that sell pots and pans. If they do not carry bigger woks, just ask them to order it for you. Hope this helps.

Hi there. In Singapore, we call this 马来面 because it’s supposed to be a dish concocted by Malays. You can go to a Zi Char stall in Singapore and ask for 马来面 and they will cook this for you. This version that we’ve cooked here is the Chinese revised version which is usually served by Zi Char stalls. Mee goreng means fried noodles - this is the Malay name of this dish. As to why it’s described as Singapore fried noodles - it is just a general term to describe that this noodles is a uniquely Singapore dish. We are 新加坡人 and Chinese is our second language. Learning how to write Singapore in Chinese is the first few words we all have to learn when we were young. Hope this explains. Cheers.
