Yea that's also a common practice - having 2-3 shoots growing at the start then tie them up together for it to be stronger. This is suitable for areas with larger wind. Alternatively, the method shown at 7:00 and 8:00 that should be ideal for avoiding wind for smaller wind.

The stem we used in the video is about 2 years old, but you can use older tree as well
