Deftones 7 words is more 90s post hardcore than anything. They toured with bands like quicksand, strife, snapcase, far, and will haven more often than nu metal bands in that era.
Exposure is a good way if you arent into theory, but theory is the best way. So learn a bunch of scales and music keys and that makes it relly easy to basically "predict" what they are going to play because you know what notes and chords work. When all that fails, looking up the key online, or watching live performances is another way to get familiar. But in general you just gotta know your fretboard really well
